Simple Whole Wheat Bread

As far as bread recipes go, easy and delicious. You can taste the honey in the bread. Makes great rolls too. Recipe halves well. I made this again recently and used equal amounts of bread flour and WW flour and it was great. Thanks, Nita!

Abby's Chicken Rollatini

I used the prociutto/mozzerella rolls that you can sometimes find in the cheese section and cut them up into pices to stuff the chicken. I also salted and peppered the chicken breasts before stuffing. This dish has really good flavor and my family liked it a lot. For those reviewers who didn't like the fresh garlic so much - I smashed the garlic with the side of my knife a few times while mincing so it ended up being more of a paste and rubbed a bit on each breast with my fingers. Note: I had some very different size chicken rolls so the smaller ones overcooked - I guess two different baking dishes would have been best in this case. Also, I degreased a little of the "sauce", added some capers, cooked it down a little and tried this over pasta - yum. I think I'll put capers into the baking dish with the chicken next time.

It seemed like 3 tablespoons of yeast was too much, compared to my other bread recipes, so I used 4t and it still came out wonderful. Great texture.

Rum Balls I

Caramel Shortbread Squares

This was one of the best cookie recipes ever. The second time I made them, I made 50% more shortbread and chocolate - I like this proportion better, with a thinish layer of caramel. I agree that they stay together better with fewer crumbs if you cut them at room temperature.

Chocolate Orange Cookies

I really liked these. Chilling the dough was important for the chocolate half. Both the chocolate and the orange portions make excellent cookies all by themselves. I tried out the chocolate dought to make cookie cutter cookies and it handled beautifully as a roll out dough. This one is a keeper.

Mrs. Ronzo's Lemon Balls

I added more lemon extract and some zest like other reviewers, and a pinch of extra flour to balance the additional liquid. As cookies, these were a little TOO cakelike for me, so for my second batch, I spread the batter thin over a parchment paper lined baking sheet, then cooled it and cut in half into two big squares, frosted one half with confectioners sugar frosting (with a drop of both lemon and vanilla extract in it) and lay the other half on top. Then I sprinkled confect sugar on top to make a pretty pattern and cut them into small bars. Little lemon cakes! They got great reviews from my kids.

Banana Sour Cream Bread

I've made this bread several times, always to rave reviews. Even people who don't usually like banana bread are happy with this one. Tried it with plain yogurt instead of sour cream and it wasn't as good. Tried it with ripe, but not very ripe bananas and it was not as good. Omitted the cinnamon dusting and it wasn't as good. Just as written, this one is a 5! Thanks!

Cinnamon Raisin Bread I

Great bread! Holds up to the knife, but soft and sweet... I used a bag of Hershey's Cinnamon Chips instead of the butter and cinnamon filling, just because I had one in the cupboard, and it came out great. Thanks!

Creamy Rice Pudding

This was excellent. I started with half evaporated and half regular milk, and ended up adding quite a bit more milk, as I saw many other reviewers did, as well as a half teaspoon more vanilla extract. Yummy!

Creamed Peas and Onions

This was a hit at thanksgiving - my dad especially liked it. I think I added quite a bit of salt and pepper in the end, and that's all the flavoring this dish needed. Thanks! This one is easy and a keeper.
