Remoulade Sauce a la New Orleans

Excellent! The first time I made this I followed the instructions and it was very good. Since then I have made some small changes by using the original recipe as a base. Try it with pureed avocado or fresh cilantro added into it. It makes an excellent sauce for fish tacos. Thanks CookingCowgirls.

Chicken Jambalaya I

Great recipe for fast jambalaya! I did pump up some of the ingredients to match my taste, omitted the garlic salt in favor of real minced garlic and added in shrimp and chicken.

Tejano Style Shrimp Cocktail

Freakin excellent. It is a great alternative to those old tired original style shrimp cocktail recipes. This is similiar to a ceviche. I added more of almost everything, but that was my personal preference. It was bright, colorful and very refreshing on a hot south Texas evening.

Wonderful Short Ribs

Yowzaa .... Followed recipe and finished with a quick baked glaze. Only problem was I did not make enough ribs, everyone wanted more and they wanted the recipe. This is now my favorite short rib recipe.

Cola Pot Roast II

Excellent, it was aromatic, tender, juicy and a real crowd pleaser. I used red potatoes, baby carrots and fresh mushrooms. I just added them until it looked right. I will definately make this again.

Oven Fried Chicken III

Easy, and very good. I also cut the mayo with some ranch dressing, and I added the spices straight into the mayo/ranch mix, instead of into the crumb mix. Nice, crunch crust and moist chicken. I will definitly use this recipe again.
