Grilled Chicken Burgers

Ive made these twice and im so glad i gave it another go. The first time i made them i think the batter was a bit too runny so the pancakes came out a litttle thin to my liking but i cut back on the liquid and they came out great. I used whole wheat pancake mix to and added chopped pecans to the mix and they were SOOOOOOO GOOOOD!!! Try them, they are just delicious!

Shrimp Scampi I

Made this last night. It was a easy quick fix. Family loved it. I used seasoned breadcrumbs and left out the wine since i didnt have any but it turned out great. I also made extra garlic butter sauce and tossed the linguini in that instead of the oil. Great recipe! This ones a keeper!!!

Caramelized Baked Chicken

My first attempt at this recipe was a total failure. I did not have enough honey and for some strange reason I didnt think that wasnt going to affect the flavor of the dish and obviously it was way too salty. But of course that was my fault. I made this last night and Im so glad I gave it another shot cause it was delish. I used Bloneless/Skinless chicken breast and served with chicken fried rice. It was so good. Thanks again.

Pepperoni Bread

I love this fun and easy recipe. Tastes great and I like not having to measure anything. I just add as much cheese and pepperoni as I like and we're good to go. I also like adding a bit of mozzarella on top of the bread w/ a dash of italian seasoning. I served this with buffalo wings and used maranira sauce for dipping the bread. This recipe is definetly a keeper. Thanks!!!

Garlic Bubble Ring

Made this last night to go with our spaghetti and meatballs and it was perfect. I used about 2T minced garlic instead of garlic powder and topped it with Parm cheese. Definetly a keeper. Thanks!

Enchilada Casserole III

I made this for Cinco de Mayo and it was a hit at our house. I used canned enchilada sauce as many others have suggested; about 2 1/2 cans and I also used Krafts Cheddar Jack shredded cheese which has Jalapenos. I did bake the tortillas for about 5 mintues and it all came out perfect. Leftovers reheat very well too. I served this with mexican rice.

Cuban Beef Stew

Made this today for dinner and it was so good. I didnt have sherry nor red wine vinger so I didnt add it. I did however, add about 3/4 cup of Goya Sofrito to the sauce and it was just perfect. I also added a small can of veggies. I served this over a bed of rice and sweet plantains. Will definetly make this again. Thanks!

Tres Leches (Milk Cake)

This has got to be my families favorite recipe on here. They absolutely love it. At first I would make the whipped topping myself but now I just by the ready made kind and its much easier and faster and tastes just as good. My family and I love this cake REALLY WET so we add lots of liquid and use a seringe to make sure that the whole cake is soaked with all that goodness. I have also made this into a Cuatro Leches (4 Milk Cake) by topping it with Dulce de Leche (Caramel) instead of the whipped topping and its to die for. They sell it canned at your local grocery store, its called La Lechera Dulce de Leche by Nestle (1 can covers the whole cake).

Italian Spaghetti Sauce with Meatballs

Absolutely delicious! Made this the other night for dinner and it was superb. The meatballs were moist and flavorful. I did put mine in the oven for a few minutes to cut some time then tossed them in the sauce so that they can finish cooking. Thanks so much for this wonderful recipe. Will definetly make again.

Creamy Au Gratin Potatoes

Made this las night for dinner and it was a hit. I did not have russet potatoes so instead i used 5 large red potatoes and I also added bacon and buttered bread crumbs to give it some added texture. Other than that I followed the recipe just as stated. It smells SOOOOOO good while its cooking :)

Salisbury Steak

My family really isnt use to eating these types of food being that we are hispanic but im glad they were open enough to try something new and they really liked it. I didnt have any of the ingridients for the sauce on hand so I used 2 packs of Liptons Onion and Mushroom Mix instead and it tasted awesome and had enough sauce to pour over mashed potatoes. I will definetly make this again. Thanks!
