Broccoli Cheese Soup

I only gave this 4 stars because I tweeked it a little. I added some celery and garlic to the onions to add some more flavor. I also added 1 diced red pepper to the broccoli. I then used sharp cheddar and velveeta together. I was very happy with the outcome and will make it this way again.

Restaurant Style Chicken Nachos

I loved this! I used chicken I had made and froze from Lime Chicken Soft Tacos recipe from this site. All I had to do was thaw it and mix a little Frank's Red Hot with Lime in it. Then I heated it with the salsa. I didn't need to add any garlic and green onions because the chicken has enough flavor. I also made my own chips by baking flour tortillas cut into wedges. I sprayed them with cooking spray and baked them at 350 for 20 min. flipping them after 10 min. I then topped them with the chicken/salsa mix then taco seasoned cheese and baked another 5 or so minutes until cheese was melted. I served them with extra salsa and sour cream. My husband really liked them and we will be making them again and again.

Caramel Apple Pie II

I made this for my son's preschool Thanksgiving feast and no one really liked it. It got a little watery. I used the caramel dip like was suggested maybe I should have used regular caramels. Will try again but not for a while.

Baked Ziti II

loved this recipe. I made it for a teacher appreciation luncheon at my daughter's school. There was none left. Everyone loved it. I will be making this for my family get together since I have two vegetarians and there is no meat in this dish. Meat really won't be missed.

Chicken Enchilada Casserole II

very good I used crushed tortilla chips instead of the flour tortilla so it was not mushy and the chips soften as it baked so it was just a little crunchy not too much. I will definitely make it again.

Beef Pot Roast

I did make some changes which is why I gave it only 4 stars. I seared the roast in the roaster pan on all sides. Then I mixed together 1 can of cream of mushroom with roasted garlic soup with 1 1/2 cans water (next time I'm going to use beef broth but I was out of it!. I whisked them together and added 1-2 tsp of thyme and a couple of shakes worcestershire sauce. I surround the beef with chopped onion, baby carrots, and potato wedges. I seasoned all with salt and pepper then poured the soup mix over. I roasted it for about 1 1/2 hours at 350. It turned out great. I will be making it again but I think I'll try it in the slow cooker.

Very good and tasty. I did what others suggested and used bread crumbs on the bottom to soak up extra butter and I also dipped the chicken in flour and egg to help the bread crumbs stick better.

Asian Tuna Patties

These were quick easy and tasty. I did add more oil than called for, about 1/2 Tbsp instead of 1 tsp. I didn't have sesame oil I used olive oil instead. My husband loved the patties and that's saying a lot because he is not a fan of tuna! I will be making these again when I need a quick and easy meal.

Chicken Enchiladas I

I love this. My husband actually found this recipe and made it for dinner when I was at work. He used to red sauce recipe from this site like someone else mentioned and they turned out great. They freeze very well also. We usually make a lot of them and are able to freeze about half. Then all we have to do is thaw and reheat for a great meal.
