King Ranch Chicken Casserole I

This recipe has potential and I will try it again, but as is, for me, it didn't work. I cooked my chicken the day before, so it was cold. If you do this, you will need more than the 20 minutes the recipe states. It took almost 40 at 300 degrees to get it nice and hot. Also, I would suggest cooking your onions slightly before mixing them in if you don't want them crunchy in the casserole. It had good flavor, just needs some tweaking.

Easiest Focaccia Recipe

Not bad for my first try at bread making. I think it could have been better, but i'm pretty sure it was my lack of experience. But the taste was good and the recipe wasn't intimidating like other breads. Maybe I'll try more bread! I've tried this for the 2nd time and it was much better! I added garlic powder, crushed red pepper flakes, and italian seasoning to the dough as well as 3 packages of that cheese you get from Pizza Hut (I was out of the good stuff) and it is Really good!

Peach Cobbler Dump Cake I

YUM! Good for when you are craving cobbler or pie and don't have the time time for the real thing. We ate it piping hot from the oven with vanilla ice cream...YUM!

Kelsey's Favorite Stuffed Green Peppers

These were pretty good. Stuffed peppers aren't my favorite thing, but hubby loves them, so I thought I'd give it a try. I used suggestions made by luv2cook and they turned out really well. Definately add some cumin and red pepper flakes. If you like them really tender, increase your baking time. I found no need to blanch them first. I also used lots of cheese--colby inside and mozzarella on top.

Beef Enchiladas II

Very good for a quick and easy meal. I added some chopped onion and bell pepper to the beef (needed to use them). Not what you would make if you wanted "real" enchiladas...but good for a quick weeknight meal.

Jalapeno Chicken II

YUM YUM and YUM! Loved this! I marinated it in italian dressing, but i think it would be really good to do a margarita marinade. This recipe is a keeper! It would also make a really great appetizer by scaling down the sizes.

Carne Asada Marinade

i will try this again on a better cut of meat. (was given thin cut ny strips). they weren't able to absorb much flavor. but i still have high hopes for this for great fajitas. i used lime instead of lemon and that was good. i also think i will add some red pepper flake next time for some heat.

Mexican Rice I

Really good. I added 1/2 clove of garlic to the onions and a couple of teaspoons of chopped green chiles to the tomatoes. I also used chicken broth instead of water. i would have used rotel instead, but i was out. also, after the rice completed cooking i added a handful of frozen corn then put the lid back on for a few minutes. the corn heated up and retained it's texture. I served this with a mexican style steak and it was really good. this will become a go-to on fajita nights!

Simple Beef Stroganoff

this was nice and simple. i browned 1 chopped onion and a clove of garlic with the beef. i also added white and red pepper. i think it needs something else, as it seems to be missing something. maybe worstichere (?) sauce? i will definately try it again and keep experimenting with the flavors. very good base to experiment with!!

Pepper Chicken Piccata

I liked this. I will use it some this summer as it is quick and not to heavy. The chicken picked up the flavors nicely. I added some italian seasoning to with the red pepper and i really like the complexity it added. I also marinated the chicken in lemon juice, white wine, butter, salt and pepper overnight. I think marinating is a good idea for this because it might be bland without it. I served it over white rice for a nice simple and quick meal!

Baked Ziti I

THis was ok, but i the fact that it was only ok was my fault. I didn't have provolone and couldn't get it at my local small town grocery store. I used half my mozzarella in the middle and half on top, so it simply was not as cheesy as i had hoped. I will make it at least one more time (correctly). my husband is unfortunately not a fan of pasta, but said he would give this another try, so i'm betting that it will be a winner.

Iowa Pork Steak

Excellent. I look for new ways to cook pork steak since it is usually on special at my grocery store and makes a cheap meal. I cooked this in the crock pot and halved the recipe-cooking only 2 steaks. I rubbed the partially frozen steaks with the salt and pepper then added the onions and used fresh garlic instead of powedered. They fell apart and were so flavorful, not always true of pork steak. We ate this over biscuits and mashed potatoes. I will definately make again.

Cake Balls

YUM! I made these for Christmas and everyone could not believe what they really were. They thought I had spent a lot of time and effort making candy. I used a german chocolate cake mix and coconut pecan frosting. Even my sis-in-law who HATES coconut loved these! I can't wait to do a lemon/white chocolate one! Oh and i had a few left after the holidays, so i stuck them in my freezer and they are still great! in fact, they taste really good cold!

Slow-Cooker Chicken Tortilla Soup

Very good. Not to spicy, not to mild, just right on a chilly night. I really liked it, although next time i will leave out the water and use all chicken broth as others have suggested. I think this would be very good with rice too.

Caramel Shortbread Squares

YUM! I will definately make these again! This is the best tasting carmel i have ever had and definately the easiest to make! I followed a past suggestion to use a handmixer to beat the carmel and it worked just fine. I also did not have light corn syrup so I used dark and couldn't tell any difference. I added a pinch of salt to the carmel as others have suggested and it really seemed to add something. I also used semi-sweet chip because i'm not a big milk chocolate fan.

Chocolate Chip Cheese Ball

Very Good. I took it to thanksgiving potluck at the in-laws and it went over very well. However, i did learn a lesson with this! Do not use store brand cream cheese-get the good stuff. It really makes a difference in the consistency of the cheese ball. Mine was grainy and never creamed properly. However, the taste was spot on and i will make this again.

This was a good basic quick meal. I enjoyed it for its simplicity and comfort food level. However, i think next time i may take a mexican twist and substitute a can of nacho cheese soup and add some rotel.

Apple Pie I

Very Runny!!! I even added flour per other reviews. However, the apples tasted delicious. I made mine a la mode and poured the juice over the ice cream--yum! But I can only give it 3 stars as the juice made my crust soggy and even after sitting overnight in the fridge it was still runny.
