Slow Cooker Chicken Cordon Bleu

Good, not great. The chicken got so tender it fell apart, which I was not expecting, so that made it different than I had anticipated. It was pretty salty with the ham, cream of chicken, cheese, butter, and seasoning from the stuffing. I think next time I will omit the butter and instead pour the remaining soup over the stuffing. But, I plan to make this again, it's great cold-weather food.

Broccoli Chicken Braid

The flavor was DELICIOUS! I used plain yogurt instead of mayonaise to cut the fat. The only problem was getting the dough to cook all the way through- even after leaving it in almost 25 minutes (any longer would have burnt the top) it was still doughy on the inside. Next time, I will probably cook it longer on a lower temperature.

Crunchy Apple Muffins

These muffins were great. I didn't have any granola on hand, so I just used rolled oats and it was delicious (and lower fat). I did have to double the topping recipe to cover all 12 normal-sized muffins. I will be making these again.

German Pancake

My mom used to make this for us all the time- it's delicious and I highly recommend it to anyone looking for a change from the usual breakfast. But you MUST make the syrup too because the combination is senstational.

Chococonut Chip Cookies

Perhaps I was expecting too much from all the rave reviews, but I found these very ordinary. I wish I would have just made plain chocolate chip cookies and saved the coconut for something a little more special. Tasted yummy, just not the special, different recipe I was hoping for.

Broccoli Cheese Crepes

These were pretty good and really easy. I'm not a good crepe-maker, so they were too thick and there weren't enough crepes to finish off the filling. I saved it and te next night reheated it with a little half and half and served it over chicken and rice. GREAT use of a leftover!

Apple Danish Cheesecake

Delicious! I didn't have almonds or almond extract on hand, so I just used an extra 1/2 cup flour and vanilla in the crust. I did not sprinkle almonds on top, either. It turned out GREAT and I don't think i will use almonds next time I make this.

Spinach Enchiladas

This was good, but not what I was expecting. The ricotta and spinach made it taste very manicotti-like. Next time I will probably use more sour cream, less ricotta, and add more spices (I added a little this time.) Overall, quick, simple, and delicious.

Chicken Breasts with Balsamic Vinegar and Garlic

The only thing I didn't like was that the breading got kind of mushy after cooking in the sauce. Next time I will probably omit the step of dredging in flour. I also omitted the extra butter to cut fat/calories. But, the flavor was still absolutely spectacular, and I will definitely make it again.

Cake Mix Cookies III

These are definitely not the best cookie recipe ever, but I had these cookies in the oven within 5 minutes of finding the recipe. For a pregnant lady with a serious craving, they were perfect. I was weary of adding sugar to the cake mix, but I think the flavor was great. (I used a white cake mix, no chips.)

Acorn Squash Soup

Delicious, perfect for autumn weather. I upped the curry powder, and didn't have any onions but substituted 1/2 pkg onion soup mix, and I think I'm glad for the extra but of flavor. Also, I had two large sqaush I needed to use, which made probably 4-5 cups, and I needed 2 cans of chicken broth.

Zucchini Herb Casserole

Delicious. I would have given 5 stars, but I did take other readers' advice and made a few slight changes: increased all spices, added fresh mushrooms, and used mozzarella instead of cheddar. Also, I used it as a main dish so I used 1 cup of rice and increased amount of veggies to fill a 9x13. Next time I think I will try adding some chicken.

Parmesan Focaccia Bread

Delicious! My husband and I couldn't keep from snacking on it all night. Instead of brushing the top with olive oil, I used Italian Salad dressing, and I also added a little bit of mozzarella along with the parmesan. Definitely a keeper.

Greek Penne and Chicken

Perhaps I set my expectations too high for this dish, but I was not impressed. I took a suggestion to use canned tomatoes, and I wish I would have just used fresh. Overall, it lacked something. I used the entire container of feta in an attempt to give it some kind of flavor. It has the potential to be good, if something is added.
