Cake Balls

Reviewed: Dec. 24, 2008
Yummy, easy, but looks impressive. Don't add food coloring to the almond bark, that doesn't work! I learned it the hard way. I also took others advice to freeze before dipping, it worked great.

Chicken Enchiladas II

Reviewed: Nov. 13, 2008
Very good, I used green enchilada sauce to cover the enchiladas instead of more sauce. Next time, I think I will use a cheese blend instead of straight cheddar.

Acorn Squash Soup

Reviewed: Nov. 10, 2008
Delicious, perfect for autumn weather. I upped the curry powder, and didn't have any onions but substituted 1/2 pkg onion soup mix, and I think I'm glad for the extra but of flavor. Also, I had two large sqaush I needed to use, which made probably 4-5 cups, and I needed 2 cans of chicken broth.

Zucchini Herb Casserole

Reviewed: Oct. 6, 2008
Delicious. I would have given 5 stars, but I did take other readers' advice and made a few slight changes: increased all spices, added fresh mushrooms, and used mozzarella instead of cheddar. Also, I used it as a main dish so I used 1 cup of rice and increased amount of veggies to fill a 9x13. Next time I think I will try adding some chicken.

Crunchy Apple Muffins

Reviewed: Oct. 6, 2008
These muffins were great. I didn't have any granola on hand, so I just used rolled oats and it was delicious (and lower fat). I did have to double the topping recipe to cover all 12 normal-sized muffins. I will be making these again.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 2, 2008
The only thing I didn't like was that the breading got kind of mushy after cooking in the sauce. Next time I will probably omit the step of dredging in flour. I also omitted the extra butter to cut fat/calories. But, the flavor was still absolutely spectacular, and I will definitely make it again.

Parmesan Focaccia Bread

Reviewed: Aug. 15, 2008
Delicious! My husband and I couldn't keep from snacking on it all night. Instead of brushing the top with olive oil, I used Italian Salad dressing, and I also added a little bit of mozzarella along with the parmesan. Definitely a keeper.

Greek Penne and Chicken

Reviewed: Aug. 13, 2008
Perhaps I set my expectations too high for this dish, but I was not impressed. I took a suggestion to use canned tomatoes, and I wish I would have just used fresh. Overall, it lacked something. I used the entire container of feta in an attempt to give it some kind of flavor. It has the potential to be good, if something is added.

Pizza Dough I

Reviewed: Jun. 15, 2008
Perfect pizza crust. The first time I made it my husband said, "Wow, this is REALLY good." Great to use half whole-wheat, half white flour.

Roasted Cajun Potatoes

Reviewed: May 5, 2008
I just used cajun seasoning instead of the paprika, etc. Took it to a potluck and recieved raves. Delicious.

Fresh Peach Cobbler I

Reviewed: Apr. 29, 2008
We did not care for the topping at all. I did substitute butter for the shortening, thinking it would taste better, perhaps that actually made it worse. But the topping was not sweet enough to compliment the peaches (which had a wonderful flavor.) We topped it with some cinnamon sugar and that helped a little. I will keep looking for a fav peach cobbler recipe.

Apricot Chicken I

Reviewed: Apr. 24, 2008
Delicious. I'd had something similar before, so I kind of knew what to expect, perhaps that accounts for the negative reviews. I used sugar-free preserves and it was not too sweet at all. I also basted the chicken a few times during the bake time. Great over brown rice.

Baked Ziti I

Reviewed: Apr. 17, 2008
Delicious. I made this in the morning, kept it in the fridge and then baked it when I got home in the evening. Very filling, makes a TON. Next time I will add mushrooms.

Eclair Cake

Reviewed: Apr. 14, 2008
So good, and so easy. I took this to a BBQ, and when I went to take their leftovers home, the 6 year old asked if I could please leave them for her. I did experience a little trouble spreading the frosting, and I even warmed it. I wish I would have chilled it for a while before trying to top it.

Chococonut Chip Cookies

Reviewed: Mar. 28, 2008
Perhaps I was expecting too much from all the rave reviews, but I found these very ordinary. I wish I would have just made plain chocolate chip cookies and saved the coconut for something a little more special. Tasted yummy, just not the special, different recipe I was hoping for.

Quick Chicken Divan

Yummy, easy, I will definitely make it again. I substituted plain yogurt for the mayo, as I don't like mayo.

Ten Minute Szechuan Chicken

Reviewed: Feb. 27, 2008
This was good, but not special. And kinda dry, especially as leftovers. I will keep this as an emergency recipe, as the ingredients are ones I tend to always have on hand.

Easier Chicken Marsala

Reviewed: Dec. 2, 2007
This was great, I didn't give it 5 stars because of the slight changes I made. I also took the chicken out of the pan to make the sauce. Made extra sauce to serve with mashed potatoes, and it was delicious.

Vanilla Granola

Reviewed: Nov. 9, 2007
After 30 min in the oven, mine was BURNED. I was expecting to cook it for 60min, like the recipe says. I don't think I did anything wrong, I followed the recipe exactly. Even without the burned flavor, I wasn't impressed.
