Beefy Spanish Rice

This was pretty good, although I did make a couple of enhancements to it. I doubled the amount of water and also added a chopped jalepeno and some red pepper flakes to kick it up a little.

Hot Buttered Rum Batter

Nothing warms the insides like a nice cup of hot buttered rum! And this recipe works great. Like other readers suggested, I creamed the butter with the sugar instead of melting it. I also cut the recipe in half. Very good!

Amazingly Good Eggnog

The name says it all. Not too difficult to make if you're the type who would much rather do things from scratch. Two things that I particularly like about this recipe: 1) the eggs are cooked and 2) it can be made a day ahead. I made it on Christmas Eve morning and we enjoyed it on Christmas day. I even had some leftover the following day and it was wonderful.

Shrimp and Crab Bisque

This was yummy! I made the following adjustments - I used low fat milk instead of the half and half which may have made it a little thinner but it didn't affect the flavour. I also added some scallops.

Lemon Butter Cookies

This is a delicious, crispy cookie. I only made one minor alteration ---I followed someone else's suggestion and used about 1 tsp of lemon extract instead of the lemon juice for a stronger flavour. Very good with tea.

Brownie Caramel Cheesecake

The good thing about waiting to make a recipe is that you can wait until it's been tested by others and learn from their mistakes and take their suggestions. So that's what I did! Make this recipe using a large size (for 13x9) brownie mix, use La Lechera (thanks to whomever offered that suggestion. I'd never even heard of that before.), and increase the cheesecake layer by half. Bake brownie layer for 20 minutes before proceeding. This turned out wonderful! We had it for a dinner party and it was the only dessert that totally disappeared! To all of the folks who tried this recipe as written with disasterous results - try it again with these alterations and you'll be pleasantly surprised.

Burgundy Pork Tenderloin

This is delicious! I followed a couple of suggestions from previous posters - used 1 c of burgundy and 1 c of beef broth. I also seared the meat in olive oil prior to baking. Sauce is great on mashed potatoes. Was quick and easy enough to prepare for a weekday meal.

Famous Coconut-Almond Balls

These were very good, but I, too, made them too big. I also used milk chocolate chips instead of semi-sweet just because I prefer the milk chocolate. We shaped them like eggs for our Easter celebration.

Dinah's Baked Scallops

These had potential. I followed previous suggestions and just drizzled a little of the butter mixture on top, but they still became a little soggy after baking. I popped them under the broiler for a few minutes and they crisped up nicely. We really liked the taste of the coating so I will be making these again, however, I think I'll try just broiling them instead of baking them.

Caramel Popcorn

Wow! Is this ever delicious! And easy. Much better than the stuff we get on the boardwalk. We were recently snowed in and looking for something fun to do. So my son and I made this. It was gone by the next day. Only complaint - this recipe should have instructions on how to stop eating it!!!
