Best Ever Creamy Soup

Reviewed: Feb. 8, 2008
I had to add more water to thin this soup. Also added extra bouillon for more flavor, but in the end, the soup tasted great and was very healthy. I used an immersion blender so I'd still have some chunks. I may cut down on the potatoes next time.

Italian Bread Using a Bread Machine

Reviewed: Feb. 8, 2008
Delicious bread! Better than the recipe I usually use. I liked the fact that it made 2 loaves. I froze the dough for the second one so we'll have it for another time. Nice rise and the texture was perfect.

Cajun Seafood Pasta

Reviewed: Feb. 8, 2008
Let me start out by saying that in my family of 5 adults, it is very rare that I serve something for dinner that everyone likes. Well, everyone liked this meal. I did cut the amount of all of the peppers in half because it just seemed like a little too much heat for us, but that was the only change made. The dish was easy and quick to prepare making it perfect for a weeknight dinner, but tastes like you fussed over it. Serve with homemade Italian bread for a hearty meal.

Cream Cheese Bread

Reviewed: Feb. 7, 2008
The taste of this bread is wonderful. I just enjoyed a slice toasted with butter and homemade blueberry jam. However, mine didn't rise as expected. Came out rather dense, but I will make it again because it tastes so darn good.

Whole Wheat Honey Bread

Reviewed: Feb. 1, 2008
I had to slice this as soon as it came out of the oven and smear it with butter because it smelled so good while it was baking. It was heavenly. I made this bread with the changes that others suggested - 2 c whole wheat flour and 1 c bread flour, 1/4 c honey, butter instead of shortening and added 2 T of vital wheat gluten. I only used the breadmaker for mixing and rising. This has just replaced any other wheat bread recipe that I have used in the past. It's soft, light textured, baked evenly with good rise. Just perfect.

Bacon Wrapped Pork Chops

Reviewed: Jan. 28, 2008
My family, who are not big pork chop fans, really loved these. I did make a couple of enhancements that were suggested by others: I seered the pork chops in the bacon fat and used shredded cheddar and Jack cheese on top. (Couldn't bring myself to use "cheez-wiz".) The chops I used were very thick (~1"). The people who said these were dry probably over-cooked them. You have to be very careful with pork chops, they cook quickly and tend to be dry if overdone. Seering helps to trap in the juices. Anyway, we enjoyed these and maybe now I won't get faces and rolling eyeballs when I say we're having pork chops for dinner.

J.P.'s Big Daddy Biscuits

Reviewed: Jan. 4, 2008
Excellent biscuits. Threw them together last night to have with beef stew. They were awesome. Nice texture and flavour. I mixed the dough in my food processor until it just came together then patted them out and cut them. It doesn't get any easier than that. I let them sit for about 3 hours before baking so they'd puff a little on their own. Picky husband even liked them.

Spicy Maryland Crab Dip

Reviewed: Dec. 26, 2007
I made this for a Christmas Eve family gathering and it was the only thing to completely disappear! People were just spooning it onto their plates without crackers or anything! I made it as the recipe was written, except I used a full pound of crabmeat since that's what came in the can and I didn't want any leftovers. The flavors blended really nicely and didn't overpower the crabmeat. Will definitely be making this again. Merry Christmas!!!

Rum Cake II

Reviewed: Dec. 26, 2007
While I was very happy to find a Rum Cake recipe that didn't use a cake mix, I think I'll experiment with the flavor next time I make it. I like a bit of rum flavor in the actual cake, so I may try to incorporate some rum into the batter. I poked the cake with a skewer before pouring on the glaze so the rum flavor was really concentrated in the holes in which it was poured. I loved the texture and density of the cake though and it was very easy to make.

Ice Cream Cake Roll

Reviewed: Nov. 25, 2007
This was a nice treat. I made it for my daughter's birthday. I filled it with home-made ice cream. I didn't make the chocolate sauce but used hot fudge sauce instead.

Newport Clam Chowder

Reviewed: Nov. 25, 2007
I'm giving this recipe 5 stars even though I made several recommended changes to it to make it a 5 star recipe. Used canned, minced clams, used half chicken broth and half clam juice and also added some bacon and celery. It came out perfect.

Apple Sheet Cake

Reviewed: Nov. 25, 2007
This was much better and easier than making a pie. The pastry was very easy to work with. The frosting sends it over the top! I used 1/2 Granny Smith apples and 1/2 Golden delicious for a nice mix of sweet and tart. Best served warm.

Wonderful pumpkin pie! I used 2 cups of cooked fresh crookneck pumpkin in place of the canned and it was excellent. Very creamy.

This is the best Cream Cheese Frosting I've ever tasted. It's very creamy. I use it on carrot cake and the pumpkin cookies from this site.

Iced Pumpkin Cookies

Reviewed: Nov. 20, 2007
Excellent cookies! I made them for a church bake sale and was "hunted down" for the recipe. Everyone loved them. I made no changes to the cookie, but I frosted them with the Cream Cheese Frosting I recipe from this site. They tasted like that pumpkin roll that everyone always likes without all the work. Thanks for sharing. Will be making these again today.

Date Nut Loaf Cake

Reviewed: Nov. 7, 2007
Very good bread and so easy to make. As someone else suggested, I used 1/2c granulated sugar and 1/2 c dark brown sugar for a richer colour. Didn't make the sauce though; just slathered on some butter. Next time I'll try the suggestion about adding some brandy. Yum!

Butternut Squash Soup II

Reviewed: Oct. 29, 2007
Yum! I tried this on a whim just to see if I'd like it and I'm glad I tried it! I did roast the squash in the 400 degree oven as suggested by others and I think it intensified the flavor. Not really necessary to chop all the veggies, just cut them in smaller pieces and cook the heck out of them....let the blender take it from there. I didn't add any cream, cream cheese or anything to make it creamier. It was creamy enough on it's own without the added calories. Very good on a cold afternoon. Definitely will be making it again. Will try to freeze some and see how that works out.

Turtles® Cake I

Reviewed: Oct. 8, 2007
Everyone at my party raved about this. I thought it was OK. I made some changes based on other reviewer's comments. I cut the amount of butter to 1/4 c and increased milk to 2/3. I'm used to scratch cake, but used a mix for this. Next time I think I'll go with my usual chocolate scratch cake I like that much better than any mix.

Antipasto Squares

Reviewed: Oct. 8, 2007
Delicious and so easy to make. I cooked them a little longer than suggested and had no problem with soggy bottom crust. Also patted the peppers dry with a paper towel before adding them. Everyone loved them and I'll definitely be making them again. Thanks for sharing this one.
