Fabulous Fargozas

A fantastic savory muffin. I made them to go with a batch of homemade turkey/veggie soup. I made a few slight modifications: used onion powder instead of fresh (about 1 tsp maybe more), garlic powder instead of fresh (1/2 tsp.), and ground rosemary (cut to 1 tsp b/c the ground stuff is so strong) For the cheese, I used a Italian shredded blend (it was mozzarella, asiago, provolone, etc). But I stayed true the recipe. This is a great recipe. Mine baked in 22 minutes directly in the tin (no liners). The result was a nice golden brown "crust" all around the muffin and tender moist interior. YUM! Kids and adults loved it. Will definitely make these again! Thanks for the wonderful muffin recipe!

Pear Pie III

Wonderful. Following other reviews, I increased the butter and pears. I had bosc pears, so sliced them thin, used 5 to make 3 spiral layers. The pears kept their shape nicely. Also added 1 tsp. Pampered chef's Cinnamon Plus spice blend (cinnamon, nutmeg, clove, orange peel). I think next time I will try putting the filling on the bottom, then the pears (has anyone tried that?) - the filling covered all my pretty layers. My 6 yr old boy loved it.

Absolutely Fabulous Greek/House Dressing

This was sooooo tasty. I used this as the dressing on the Greek Orzo Salad from this site. I pared down the servings to 10 and had enough left over for a couple of dinner salads. I did not use all the salt, just a generous shake. Thanks for the great recipe.

Greek Orzo Salad

Absolutely great! As another reviewer suggested, I did not use the spices/marinade here, but used the Abolutely Fabulous GreekHouse Dressing from this site. I could not stop eating it. I did not have artichoke hearts, so added sliced green olives instead. Yum.

Blueberry Oat Bars

Following some of the other suggestions posted, I added about 1 tsp. of cinnamon to the crust/topping. I used half quick oats and half long cooking - the texture is very nice. I also made it in a smaller pan (8 x 11). I increased the blueberries to 3 cups, but did not change the sugar. Used lime juice instead of lemon b/c that is what I had. The filling got a little too thick, so I added a splash of water and was able to pour this all over the crust. I lightly patted the topping on. I had a similar problem with browning. But it was quite tasty. I think it was even better the next day. Kids rated it as "medium goodness". Hubby and I liked it alot.

Simple Scones

Yummy and tender. I subbed vanilla yogurt for sour cream, since that is what I had. Also, used frozen blueberries and 1/3 c. cinnamon chips for my add-ins. I added 1 tsp. of cinnamon with the dry ingredients. I used a large cookie/muffin scoop as my batter was messy and baked on silpat liner. Probably should have measured the yogurt more carefully. The scones ran into each other, but easily separated as they cooled. Made 12.

Gyros Burgers

These were really very tasty. I did not have savory, so substituted oregano. I made rectangular patties and broiled them in the oven. Topped with my own "gyro" sauce (greek yogurt, chopped cucumber, dill, black pepper). My 5 y.o. said "yummy, yummy, yummy. This is awesome" as he downed 1.5 patties!

Banana Oatmeal Bread

This is my fav banana bread recipe now. I made a few modifications: Used 1/2 brown sugar; 1/2 white sugar Used 100% white whole wheat flour (King Arthur) Added a handful of ground flax seed (1/4 cup) Doubled vanilla & cinnamon Didn't chop raisins. I found that I needed to watch the time and test more carefully. The dense texture made this test done, but it was still raw in the middle. I had put it on a rack to cool and the middle fell out. I scooped it up and re-baked it 10 min. Amazingly, it turned out great and tasted like a cookie. My 5 year old boys love this stuff. It tastes even moister after a day or 2. It is a dark loaf and dense (not fluffy). The crust is yummy. The oatmeal adds a nice rustic texture. High 5s and thanks for the great recipe.

Easy Chicken Marsala

Absolutely excellent! I wanted to lick the pan & my plate afterwards. I used regular yellow onion, finely diced, since I didn't have green onions. Also, I sprinkled the chicken with garlic powder. I doubled the sauce and served it over baked potatoes.
