Sfingi
This makes way too many sfingi unless you are celebrating all the Josephs in your extended family. Cut recipe in 1/2 or 1/4. I've been making them for years, AND THE BEST TIP is to put the batter in mini-muffin pans and bake at 350 for 15 to 20 minutes. No nasty frying and light as air sfingi. Vive San Giuseppe!!

Easy Pumpkin Muffins
This recipe is incredible! I have made it with spice cake, adding a little extra pumpkin pie spice, raisins and walnuts; lemon cake mix, adding nothing and getting a great light lemon/pumpkin flavored muffin; and chocolate cake mix, adding mini chocolate chips and getting a great, moist chocolate muffin without a hint of pumpkin. I've made 6 large or 12 small muffins from the recipe. If you don't like the lumpy top, smooth out the batter with a wet finger.Thank you CindyCosta for a real keeper!!

Delicata Creamy Squash Soup
For a more healthful soup, I sauteed the squash with more onion for more carmelization, before adding the veggie broth. I simmered the broth and squash together for about 45 minutes, removed the bay leaves. pureed the soup, and added about 1/2 tsp of nutmeg. I added a soupcon of heavy cream to eachbowl when I served it. More taste of squash in this version, too.
