Pumpkin Hummus

I love anything with pumpkin in it but I was a little skeptical about this. I cut the recipe in half and used a 29 ounce can of chickpeas. That seemed to be a good ratio because it tastes excellent. My husband loves it too and he tends to dislike things that are nontraditional.

Caramel Apple Bars II

I made these to bring to church for coffee hour and everyone raved about them. I made them exactly as the recipe states except I used pecans instead of walnuts. They are very messy (especially the inner pieces) so be sure to bring lots of napkins!

Skinny Scalloped Potatoes

I made these to go with duck for a Christmas dinner with my husband. I added some onions in with the potatoes and made them in a round casserole. They were wonderful! I love finding healthier holiday recipes that let us enjoy a nice dinner while still watching what we eat.

Chunky Rhubarb Applesauce

Slow Cooker Clam Chowder

I made this recipe twice. The first time the milk curdled in the crock pot when I didn't stir it. The second time I was home and stirred it every 2 hours or so. It did not curdled, but it came out with an odd brown color and a film over the top (I'm assuming from the bacon grease). It was edible the second time but I probably won't make it again.

Candy Apple Jelly

I just made two batches of this. The color is very pretty and the small amount that I tasted was great as well! These will be going in my Christmas baskets this year. I got six 8 oz jelly jar from each batch for a total of 12 jars. This is probably because I only used about 4 cups of sugar in each batch instead of 4 1/2.

Tater Tot Casserole III

This recipe calls for too much milk. It made the casserole bland and runny. I think cutting it down to 1/2 or 3/4 of a cup of milk would make it much better.
