Spinach and Leek White Bean Soup
About this Cook
After working in the fast lane for far too long, I went back to school and became a primary teacher... and haven't regretted a single moment! Right now I'm a supply teacher which gives me ample time to enjoy the process of cooking... plus now that I have someone special to cook for, I'm much more motivated.
My favorite things to cook
I love making my own pasta sauces from scratch. I enjoy grilling meats and veggies - mmm nothing like a steak and green beans! I also like making stir fry, my own guacamole, baked salmon, fajitas, chili, and I make a killer pesto.
My favorite family cooking traditions
Coming from an Italian background I tend to lean towards home-style cooking... but I am also creative and adventurous and love to try new things.
My cooking triumphs
So far my biggest cooking triumphs were recipes I've tried off this website! The ratings and reviews are VERY helpful and so far most of what I've tried has been hugely successful.
My cooking tragedies
Overcooking pasta or overcooking meat is tragic. I once made a roast dinner that was WAY too dry... it was awful! Thank god for wine.

Chocolate Pecan Pie VI
My guests loved it but I prefer the gooey middle of a pecan pie and this one just didn't cut it.

Roasted Red Pepper and Tomato Soup
An INSTANT hit! I make it at least 4 times every winter and everyone who tastes it ALWAYS has seconds! Here are my minor modifications: 1. I used 1 can of chopped tomatoes instead of peeling and seeding them myself (which took WAY too long). 2. I added an extra red pepper (LOVE the taste of them. There is NO substitute for roasting your own peppers so take the time for this one.

Chocolate Chip Banana Bread II
Perfect recipe EVERY time! I use PECANS instead of walnuts for a different taste and I always sprinkle chocolate chips on top of the loaf... mmmmm
