Garlic Shrimp and Cheesy Grits

These were really really good. I think the trick is to use real chicken stock, not the canned stuff. I had some stock that I froze last time I did a chicken and used it for this recipe. Delicious!

Honey Balsamic Vinaigrette

This is excellent with a mixed greens, strawberries, feta, and sunflower seeds. It is really sweet and potent, so a 2 Tbsp serving can cover a really big salad.

Zesty Quinoa Salad

I was a little disappointed based on the other reviews here. I thought this was way too salty, and the citrus from the limes was overpowering. If I make it again, I'd likely cut the salt and citrus in half. Also, I'm not sure the 1/4 cup of oil was worth the added calories. I may cut that by 1/2 as well.

General Tsao's Chicken II

I use this recipe all the time when I want a sweet brown "asian" sauce. Works well with just veggies and even tofu. (In other words, you don't have to do the fried chicken part if you don't want to.)

Thousand Island Dressing II

I was skeptical, but this worked great on reubens. I chose this version of the recipe because it didn't have anything that had a very limited shelf-life. I can mix up a batch and it will stay good for months in the fridge. (Unlike the versions with eggs.)

World's Best Peanut Butter Fudge

Oh so good! The second I tasted this, it mentally transported me to the fudge stand at the state fair. This is easily on par with fudge from a fudge shop. Instead of boiling for 5 minutes, I used a candy thermometer to get the temp up to 235-240 degrees (which is the proper temp for fudge) while constantly stirring.

Easy Masoor Daal

Wow, how does this get such high reviews? We thought it was extremely bland. Even after trying to spice it up a bit, we were still pretty disappointed. Not even in the same ballpark as the delicious daal our Indian neighbors made us last week.

Easy Peach Cobbler II

This is a fantastic one! The bread adds a crispy element to the cobbler that we all fight over! We do it with just about any kind of canned fruit -- peaches, apricots, plums, etc.

Peach Cobbler Dump Cake I

It was ok, but pretty much tasted like cake mix and peaches. No big "Wow!" However, I will say that if you are in a bind where you need to throw something into the oven in 90 seconds to take to a party....this is a good candidate.

Pizza Dough III

Had to add a little extra flour while in the mixer to get the velvet like texture. Also brushed a little oil and oregano around the edge to make a nice golden crust. Exceptional.
