Juicy Roasted Chicken

Reviewed: Sep. 17, 2009
Excellent. Tastes just like my grandma's. Very juicy. I followed the recipe closely (only difference is that I used real butter). I used a digital meat thermometer during baking and have to say that this recipe cook time is spot on. Thanks so much for this recipe - love to have that grandma's home cooking taste I miss so much since she passed away.

Lemon Pasta Sauce

Reviewed: Jul. 19, 2009
Very good. I omit the zest and use chicken broth instead of beef. I also like to add artichokes and capers with the pasta.

Golden Potato Soup

Reviewed: Feb. 28, 2008
My family loves this soup. The only changes I make are using Cheddar cheese instead of American and adding carrots. It is a great cold-weather meal, and pleasing for adults & kids. Very easy to make. Thanks for this recipe!

Shrimp and Feta Cheese Pasta

Reviewed: Jan. 10, 2008
Very good - but have to make adjustments. I added closer to 1/2 cup white wine, a little extra olive oil and and extra tomoatoes to give it more moisture. Tasted very fresh - and is very easy to make.

Garlic Prime Rib

Reviewed: Jan. 10, 2008
I made for our Christmas Eve dinner - my husband said it was better than any Prime Rib he had ever had. I used a much smaller cut of meat and used a digital thermometer to make sure I didn't over-cook. It came out perfect. Thanks for this recipe - it helped make our holiday dinner even more special!

Pumpkin Crunch Parfaits

This is very good. I have made it for several people and got rave reviews. I did add the entire can of pumpkin (15 oz) and extra pumpkin pie spice.

Greek Pasta with Tomatoes and White Beans

Reviewed: Oct. 3, 2007
I love this as a weekenight dinner. Very fast, great fresh taste. I use whole wheat or "plus" pasta to make it even healthier. The whole family loves this one.

Pork Chops with Raspberry Sauce

Reviewed: Oct. 3, 2007
So good. The raspberry sauce makes this such a nice dish. Easy enough for fast weeknight meals, nice enough for dinner guests. I used raspberry balsamic vinegar.

Chicken Cordon Bleu Casserole

Reviewed: Aug. 14, 2007
This was ok - not a big hit in my house. I did add 1/2 milk 1/2 sour cream as other suggested. It was a bit too salty with the condensed soup and ham - but I couldn't find the low sodium soup at my store. My husband doesn't like recipes made with condensed soup, so I am not too surprised that it didn't go over well in our house. I also didn't like the clean-up - too many dishes and the frying pan from the chicken. The pluses were the creaminess and the yummy swiss cheese.

No Bake Chocolate Oat Bars

Reviewed: Aug. 10, 2007
Good, but very rich. I like sweets, but this was even a little too sweet for me. I used less brown sugar and butter than was called for & kept refrigerated. They didn't crumble that way, epsecially in the summer heat.

This was good. My 2 year old loved it. The sauce is very rich - not healthy, but tasty. Very easy to make.

Dill, Feta and Garlic Cream Cheese Spread

Reviewed: Jun. 8, 2007
Excellent. Love the strong flavor of the feta. I used dried dill and it works great. Tastes good with crackers and also spread on raw veggies.

Fast, easy - and so good you can easily serve as a dinner. Black beans and platains work great as sides.

Chicken Breasts in Caper Cream Sauce

Reviewed: Jun. 8, 2007
This recipe is really delicious and impresses dinner guests. Restaurant-quality meal. I like to make double-triple the sauce and serve with bowtie pasta. We love capers, so I also add plenty of extra.

Cheesy Baked Eggplant

Reviewed: Jun. 8, 2007
This is very good. I followed the recipe and enjoyed the flavor - had a nice, fresh taste. Really enjoyed the spinach and the eggplant cooked perfectly. Went great with a salad and some garlic bread. I am always looking for good, meatless dishes and this one will go into our dinner rotation.

Aunt Carol's Spinach and Fish Bake

This was incredibly bland to me. I even added Old Bay to the fish and vidalia onions to the spinach. I will add a lot more spices if I ever try this again.

BBQ Pork for Sandwiches

Reviewed: Mar. 23, 2007
Excellent! My husband and I don't like the same foods ... I made this for him, as I am not a big fan of BBQ. Turns out I loved it too. I used the boneless ribs like the recipe calls for. They fell apart so easily. I used a Memphis style BBQ sauce. This is really delicious and simple, and will be a regular recipe of ours from now on.

Ginger Glazed Mahi Mahi

Reviewed: Feb. 19, 2007
This glaze is so good I would eat road kill as long as I had this sauce. Seriously though, I add a little extra ginger - I also double the glaze so I can use it on rice. It is really delicious, and even better when you use a good Balsmaic Vinegar and Extra Virgin Olive Oil. I have made it several times and everyone loves it. I am going to try it on other types of fish and maybe even chicken.
