Mediterranean Chicken Salad

Used previous suggestion of Ken's Lite Sundried Tomato dressing with one rounded TSP oregano added. It's 90 degreeswith 100% humidity and a perfect dinner. Thank you

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Same ingredients--different method. S & P and garlic powder on chops. Brown quickly on high heat on both sides. Place in a baking dish. Brown onion in same skillet then add tomatoes, basil and garlic to heat through and then place in top of chops. Cover and bake at 300 for 30 min. Sprinkle with balsamic vinegar and top with feta to serve. Keeps the chops very moist. Just delicious.

Jenny's Jambalaya

Outstanding and simple dish. Cooks perfectly in an electic fry pan. To use brown rice be sure to cook at least 30 minutes and keep an eye on the liquid, you may have to add more. Also don't add the shrimp till the last 5 minutes.

Traditional Osso Buco

Broccoli Rabe and Sausage

With two bunches of rabe and although only boiled for 8 minutes still a mushy mess. Good flavor although chard or kale would probably hold up better. Will try again with no boiling but sauteing instead.

Chicago-Style Pan Pizza

Followed other reviews advice. Pre-cook crust for 15 minutes. Drain tomatoes, add spices and let it sit for about one hour. Dust deep dish pan with corn meal. This is by far the best pizza I have ever made.

Pasta with Greens N Beans

Made just as directed and it was great. To change it up the next time I omitted the pasta, used 1 lb. of sausage sliced, two can of beans and two bags of escarole. A dash of red pepper flakes and you're all set.

Gourmet Sweet Potato Classic

OK--made for Thanksgiving for the first time and got rave reviews . Cut the white sugar to 1/3 cup and used yams and not sweet potoatoes, 2% milk instead of heavy cream. This was delicious and not overly sweet. Thank you for the recipie

Stuffed Peppers with Turkey and Vegetables

Fantastic as written. I added some parmesean and shredded mozzerella as we are cheese fanatics. Can also microwave cored and seeded peppers cut side down on plate covered w/plastic wrap for 2-3 min. Helps soften them. Then bake in 350 oven for 30 min.

Slow Cooker Rosemary and Red Pepper Chicken

I always make the recipe as written to start. With that said I found this a little lacking so I tweaked it a little. Used bone-in chicken the browned it and the sausage first (sun dried-chicken sausage). Carmelized the onions and peppers and then placed in cooker with one small can diced tomatoes with oregano and rosemary. Substituted one can of chicken stock for the vermouth and added small button mushrooms for the last two hours. Only took 5 hours on low to be fall off the bone delicious.

Considering there were just a few ingredients these were fantastic. Marinated the beef for 24 hrs. Onions and peppers for six and mushrooms for two. Use zip lock bags for quick clean up.

My Best Clam Chowder

Sauted veggies in fat of 4 slices of bacon as some advise. Used 2 cups fat free half and half and 2 cups skim milk to cut the calories. Use three cans of chopped clams and one can whole baby clams with all the juice. Omit the water. Did not add cooked bacon to finished product as I did not like the texture.
