Chicken with Asparagus and Roasted Red Peppers

Outstanding and simple dish. Cooks perfectly in an electic fry pan. To use brown rice be sure to cook at least 30 minutes and keep an eye on the liquid, you may have to add more. Also don't add the shrimp till the last 5 minutes.

Lamb and Winter Vegetable Stew

Cheese and Sausage Stuffed Zucchini

Use one full pound of sausage and cut the cheese ingredients by half. With four regular sized zucchini it will fill a 9x12 pan. I agree that it is not necessary to microwave the zucchini first. Good idea to cook onions w/sausage. Made this last night and although delish--too much cheese filling.

Stuffed Peppers with Turkey and Vegetables

Fantastic as written. I added some parmesean and shredded mozzerella as we are cheese fanatics. Can also microwave cored and seeded peppers cut side down on plate covered w/plastic wrap for 2-3 min. Helps soften them. Then bake in 350 oven for 30 min.

Sage Pork Chops

I cut the total cook time to 40 min. for bone in chops and they were still dry. The flavor however was excellent. Will try again with less cooking time. If using Knorr cubes only use one for a cup of water.

Considering there were just a few ingredients these were fantastic. Marinated the beef for 24 hrs. Onions and peppers for six and mushrooms for two. Use zip lock bags for quick clean up.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Same ingredients--different method. S & P and garlic powder on chops. Brown quickly on high heat on both sides. Place in a baking dish. Brown onion in same skillet then add tomatoes, basil and garlic to heat through and then place in top of chops. Cover and bake at 300 for 30 min. Sprinkle with balsamic vinegar and top with feta to serve. Keeps the chops very moist. Just delicious.

Gourmet Sweet Potato Classic

OK--made for Thanksgiving for the first time and got rave reviews . Cut the white sugar to 1/3 cup and used yams and not sweet potoatoes, 2% milk instead of heavy cream. This was delicious and not overly sweet. Thank you for the recipie

Ratatouille

This is fantastic. I cooked the eggplant with the garlic, onion & parsley first. Then layer the rest of the veggies with dried rosemary, basil and thyme. Used 1 cup white mushrooms and one cup baby portobellos. Asiago cheese is a preference of mine. Small can of seasoned diced tomatoes on top and your're set to go. Ok alone or over pasta. Super healthy

Really excellent and easy recipie. Used flour and whole wheat tortillas and refrigerated over night for the party. Used a serrated steak knife and they cut really well. Thanks much

Broccoli Rabe and Sausage

With two bunches of rabe and although only boiled for 8 minutes still a mushy mess. Good flavor although chard or kale would probably hold up better. Will try again with no boiling but sauteing instead.
