Chicken with Mushroom Sauce

Very nice dish and easy to make, not too many ingredients. I modified this recipe as follows: I deboned 2 large chicken breasts, filleted them, then pounded all of the pieces flat. I coated them in a combination of flour and Italian bread crumbs, sprinkled each with a bit of garlic salt and pepper, then sauteed them on medium heat in light olive oil. I doubled the sauce recipe and used equal parts of chicken broth and chardonnay. I added 2 cloves of minced garlic with the green onion, and added 1/4 cup of cream at the end. We served this with brown rice and it was delicious & well received.

Garden Penne

Excellent recipe with lots of variations possible. We excluded the peppers, added some fresh sliced mushrooms and chopped kale. I added 1up of low fat ricotta & 1/3 cup parmesan cheese to the mixture when blending it all together prior to baking. You can reduce the mozzarella topping if you want a trade off. What is particularly nice is that this freezes well. We freeze leftovers in individual portion sizes with our Food Saver. Just defrost & reheat in the microwave or a warm oven - it'll save you $$ on fast food alternatives for those nights you're too tired for kitchen wizardry. This dish seems to just get better over time!

Crunchy Pea Salad

If you want a bit more kick to this recipe, try adding 1 tsp of dijon mustard, and at least 1-2 tsp of creamy horseradish. The extra spice & heat are so delicious!

Korean BBQ Beef (Pul-Kogi)

This is a terrific recipe, every bit as authentic and delicious as the dish I ate in Korea many years ago. My husband & our guests raved about this. We'll have this again! We served with the Korean Cucumber Salad, which was the perfect side dish for this.

Korean Cucumber Salad

I followed this recipe to the letter and we thought it was the perfect side dish for the beef bulgogi. I wouldn't change a thing, and our dinner guest also thoroughly enjoyed it and even went back for seconds. Terrific summertime crispy veggie salad and the spice is just right!
