City girl, now living in the country on 4 acres. Plan on raising our own laying hens, raising some goats for milk & cheese, and growing an organic garden. My mind is willing, just hope my body stays able! :o)
My favorite things to cook
Breakfasts! I'm an egg-oholic! Always on the prowl of for healthy casseroles that freeze well. Am enjoying trying my hand at ethnic dishes with exotic spices!
My favorite family cooking traditions
Thanksgiving at my mother's home. Her turkey gravy takes 2 days to make and is the most insanely delicious gravy ever. Watching mom during the last hour of it's creation is to witness alchemy genius!
My cooking tragedies
My grandma died and didn't write any of her fabulous baking recipes down. It all went with her :o( We tried to coax the info out of her, but she never measured anything, just threw it all together with a `pinch of this and that'. Gone forever are her heavenly fritters, divinely gewy cinammon buns, soft and chewy homemade breads. Tragedy is an understatement.

Garden Penne
Excellent recipe with lots of variations possible. We excluded the peppers, added some fresh sliced mushrooms and chopped kale. I added 1up of low fat ricotta & 1/3 cup parmesan cheese to the mixture when blending it all together prior to baking. You can reduce the mozzarella topping if you want a trade off. What is particularly nice is that this freezes well. We freeze leftovers in individual portion sizes with our Food Saver. Just defrost & reheat in the microwave or a warm oven - it'll save you $$ on fast food alternatives for those nights you're too tired for kitchen wizardry. This dish seems to just get better over time!

Korean BBQ Beef (Pul-Kogi)
This is a terrific recipe, every bit as authentic and delicious as the dish I ate in Korea many years ago. My husband & our guests raved about this. We'll have this again! We served with the Korean Cucumber Salad, which was the perfect side dish for this.

Korean Cucumber Salad
I followed this recipe to the letter and we thought it was the perfect side dish for the beef bulgogi. I wouldn't change a thing, and our dinner guest also thoroughly enjoyed it and even went back for seconds. Terrific summertime crispy veggie salad and the spice is just right!
