Quick Coffee Cake

Reviewed: Oct. 2, 2006
This was the BEST Coffee cake I've ever made. I did, however, make a few changes as suggested by others. I added 2/3 c sugar to the dry and a 6 oz container of Fat Free Vanilla yogurt to the wet ingredients. I topped half of the cake with the suggested topping and the other half I added shredded coconut and pecans to the topping, YUMMMMM!! My family LOVED IT!! The pecans and coconut were absolutely delightful! Very moist, PERFECT! A keeper for me!

Poor Man's Pecan Pie

Reviewed: Dec. 2, 2010
WOW!! It was great! I love pecan pie but refused to drag 4 kids along to find pecans the day before Thanksgiving. I took this to my in-laws and it was gone BEFORE the traditional pecan pie that was already there. Many compliments and requests for the recipe. I did have to cook it longer and I used light corn syrup b/c that's what I had on hand. I'm trying to find an excuse to make it again :)

Artichoke Wonton Cups

Reviewed: Feb. 4, 2007
Very good. Went over well at my party. I will make these again but substitute half of the mayo with cream cheese. I also added a pinch of red pepper flakes. Very easy to make. They reheat well and still taste great the next day!!

Mall Pretzels

Reviewed: Jun. 16, 2011
YUMM!! I followed the advice of another and quickly laid the pretzels on a paper towel to absorb the excess water/baking soda before putting them on a baking sheet. They turned out perfect, 6 made with butter, cinnamon and sugar, the other 6 with butter and salt. I can't wait to make them again!!

Shredded Brussels Sprouts

Reviewed: Dec. 24, 2011
I brought these to Thanksgiving dinner at my mother-in-laws and was just asked to bring them to Christmas dinner. I left out the pine nuts and cut the brussel spouts in half instead of shredding them. Delicious!!!

Chicken Marsala

Reviewed: Jan. 17, 2009
I followed the directions and it turned out a tad bit bland. I added extra wine and cooked it a little longer to try and help it out, it didn't work. I'm going to stick with my old stand by.

Good but too many dumplings. I will make again, great flavor, but with half the dough.

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 29, 2008
Great recipe. My husband is the gingerbread fan here and he loved it. They taste like gingersnaps to me, only softer.

High Temperature Eye-of-Round Roast

Reviewed: Jan. 4, 2008
PERFECTION!!!! I let the eye-of-round come to room temperature before cooking, which resulted in a medium-done roast. Everyone, including myself, raved over the roast. I also used Montreal Steak seasoning. I cannot wait to make it again!! The best eye-of-round I've ever had, hands down! PERFECT!!!

Coconut Custard Pie III

My new go to for Coconut Custard. I prefer cinnamon over nutmeg, personal preference. I've used this recipe more than once and it's always a hit, cinnamon and nutmeg!

Cowboy Oatmeal Cookies

Reviewed: Feb. 16, 2010
YUMMM! Tastes like those butter crunch cookies from the school cafeteria, only better! I have made these a few times and they are always gone by the end of the day. I've also added chopped pecans and the kids didn't even notice.

GREAT! I used frozen boneless skinless thighs (they don't dry out as easy as breast) and it turned out great. Everyone loved it, will use again and again!

Peking Pork Chops

I loved it but it only rates 4 stars because no one else really did. It was a little too salty for the kids. I'll try it again with low sodium soy.
