Shredded Brussels Sprouts

I brought these to Thanksgiving dinner at my mother-in-laws and was just asked to bring them to Christmas dinner. I left out the pine nuts and cut the brussel spouts in half instead of shredding them. Delicious!!!

Very good, will become a staple in this house. Low fat, low cal and big on flavor. I served them with spicy turkey burgers, yum!!

Mall Pretzels

YUMM!! I followed the advice of another and quickly laid the pretzels on a paper towel to absorb the excess water/baking soda before putting them on a baking sheet. They turned out perfect, 6 made with butter, cinnamon and sugar, the other 6 with butter and salt. I can't wait to make them again!!

Poor Man's Pecan Pie

WOW!! It was great! I love pecan pie but refused to drag 4 kids along to find pecans the day before Thanksgiving. I took this to my in-laws and it was gone BEFORE the traditional pecan pie that was already there. Many compliments and requests for the recipe. I did have to cook it longer and I used light corn syrup b/c that's what I had on hand. I'm trying to find an excuse to make it again :)

Coconut Custard Pie III

My new go to for Coconut Custard. I prefer cinnamon over nutmeg, personal preference. I've used this recipe more than once and it's always a hit, cinnamon and nutmeg!

Cowboy Oatmeal Cookies

YUMMM! Tastes like those butter crunch cookies from the school cafeteria, only better! I have made these a few times and they are always gone by the end of the day. I've also added chopped pecans and the kids didn't even notice.

I followed the directions and it turned out a tad bit bland. I added extra wine and cooked it a little longer to try and help it out, it didn't work. I'm going to stick with my old stand by.

Grandma's Green Bean Casserole

Made this for Christmas dinner and it was a big hit! I'm no fan of the typical green bean casserole but even those who are die hard fans loved it! I cut back on salt and flour, delish. Never again will I make the old stand by!
