Gingerbread Boys

I made ninjabread cookies (using ninja cookie cutters) with this recipe, and they were cute AND tasty! I doubled the recipe, used lemon zest instead of orange, molasses instead of corn syrup, used less cinnamon as I ran out, and added a good amount of freshly grated nutmeg. For the simple decorations, I used meringue powder mixed with a bit of water and used a small Ziploc bag for piping. Super easy and fast!

To Die For Blueberry Muffins

These were fantastic! Very moist and flavorful. Here were my mods: substituted 1/4 cup of wheat bran in place of 1/4 cup flour. I ran out of sugar, so I only had about 2/3 cup instead of 3/4 cup. They were still moist and delicious though. I used frozen wild blueberries. For the topping (since I ran out of sugar), I substituted maple syrup and added a pinch of salt. It turned the mixture into a paste so I added a handful of panko to make it more crumb like. I put a teaspoon of the mixture on top of the muffins (12 muffin tray) and this turned out to be a lovely crunchy top. Delicious! Thanks for the recipe!

Big Soft Ginger Cookies

Delicious cookies! I pressed a single piece of honey roasted pecan on each cookie as soon as they were out of the oven. I also added a little bit of grated fresh nutmeg for added kick. I also used Robin Hood NutriBlend flour instead of All Purpose.

Chocolate Cupcakes

I made these for my son's first birthday party - all the little babies and moms loved them! I made my own light icing by beating until fluffy some cream cheese, butter and icing sugar, with a drop of blue food coloring.

Prize Winning Baby Back Ribs

Terrific recipe - I've been using it ever since I found it. Variations I've tried include substituting chipotle chilli powder instead of regular - gives a nice smoky flavor; adding some fresh garlic; smothering the ribs with dijon underneath the rub; as well as cooking the ribs on the crockpot prior to finishing on the grill. Everyone LOVES these ribs!

Tasty Green Bean Casserole

My husband, who hates vegetables so much that he claims to be allergic to everything, LOVED this dish. I made it sans bell peppers and french fried onions - also used fresh mozzarella balls for the cheese. Served with rice and grilled salmon steaks seasoned with salt & pepper and a squeeze of lemon. YUM!

Pork and Shrimp Pancit

I've been making pancit all my life and thank you, thank you for showing me a MUCH easier way to cook it! Growing up, I had only ever seen this cooked one way - stir fry the vegetables, then add the noodles - and I always hated how hard it was to stir after the noodles were added! All Filipinos have their own preference for their pancit - I like mine with soy sauce and lots of lemon. I use just about any meat and veggies I have available at the time. The oyster sauce is a nice touch.

Ziti with Italian Sausage

This was delicious but I missed the fennel flavour that is present in the traditional recipe. I used fennel seed to compensate. I omitted the canned mushrooms and used fresh eggplant instead. To save time, I used pre-packaged grated "Italian blend" cheese instead of pure mozzarella.
