About this Cook
Growing up I was always more comfortable in the garage than the kitchen. While preparing a recipe with many steps and ingredients I catch myself hyperventilating. I have also broken out in hives. I am hoping to change this! I have 3 grown children who were raised on taco bell and little ceasar's pizza. Oh, 3 years ago I lost 85lbs on the low carb diet, and I have kept it off!
My favorite things to cook
I can make a killer omelet! It is one of the 3 things I have always been able to cook well. (tuna casserole and spaghetti with meatballs are the other two).
My favorite family cooking traditions
Pretending to help my Mom cook, yet she is the only one doing anything.
My cooking triumphs
I got married last year and have really had a breakthrough in the kitchen. I have actually learned to enjoy cooking (and the praise from my husband).
My cooking tragedies
For years I routinely bought replacement cookware at thrift stores because I ruined it so often, burning things beyond repair.

Alaskan Cod and Shrimp with Fresh Tomato
Low calorie and tasty. We had dieters, diabetics, and low-fat menu guests and this was perfect for all. Grilled some tomatoes and chili peppers, removed some seeds, and blended in a food processor to serve on the side. (Remove the tomato skins, but not the chili skins, salt to taste. )

Cinnamon Snails
Scaled to half. Real mushy, even after adding more flour. Also, this seems like a cookie recipe rather than the traditional "snails" I was hoping for.

Quick Ziti with Swiss Cheese and Ham
A few changes: I sauted chopped red onion with the chopped ham (in butter instead of oil) and used shredded mozzarella instead of cubed swiss. Also,just drain the pasta, don't rinse it.Fast, easy, and tasty!
