Raspberry Oat Bars

Great recipe, I like to sprinkle the top with sliced almonds and mix a little almond extract in with the crust mix - it goes really well with the raspberry jam.

Easy Mint Chocolate Chip Ice Cream

Really good recipe! All the ice creams I have previously made have been a bit "home made" (but not in a good way!) whereas I would be happy to serve this recipe to others outside the family!

Caramel Crispy Treats II

This recipe is in a British cookbook from about 10 years ago, except it uses around half the butter used here. Anyway I made the cookbook version on the weekend - very nice although still a little too buttery! Definitely cut down on it.

Low Fat Apple Bran Muffins

Made these yesterday, they're ok for a low-fat low-cal snack but not nice enough to scoff the lot in one sitting - which is a good thing I suppose! I added 2 tbsp splenda to the mix in response to previous reviews that said these muffins weren't very sweet, however I found this made them way too sweet so will leave that out next time.

Smoked Salmon Mousse

Not sure whether the ingredients are a little different here in England as I made this as stated and it came out extremely salty. It's a good basic recipe though and I will make it again but substitute fresh cooked salmon for some of the smoked.

White Chip Chocolate Cookies

Good cookies but too sweet for me even though I cut down on the sugar. Will definitely make again but will cut down the sugar a tad more. I also baked them for the recommended time but they didn't look quite cooked - big mistake - if you bake them till they look cooked they will harden up way too much! But a great basic recipe.

Clone of a Cinnabon

I've had a few attempts making bread/rolls etc before but they always tasted really yeasty. This is the first recipe I have tried that has turned out just perfect! This is despite doing everything by hand as I don't have a bread machine/food mixer. The only change I made was to add some raisins to the dough (we don't have cinnabons here in England so I don't have to be authentic!). I also originally cut down on the flour as suggested by some other reviewers but the dough was too sticky to knead by hand so I ended up using the full amount per the recipe and it was fine. One last thing - I put a couple of sheets of plastic wrap (brushed with a little oil) directly onto my kitchen worktop, and rolled out the dough on that - much less messy and great for rolling up the dough after sprinkling with the sugar etc.

Dog Treats I

These treats look and smell quite plain but my two dogs go crazy for them! I didn't have any cornmeal so I substituted with some more whole wheat flour, and swapped most of the cheese for peanut butter to keep the cost down. Also as I don't have cutters I just rolled out the dough and cut into squares using a pizza wheel - quick and easy!
