Baked Haddock

Don't use a rack!! I rated this 4 because it seems like a potentially good recipe. However, after reading reviews about soggy fish, I decided to try one reviewer's recommendation of placing the fish on a rack, on top of the baking pan. First, all of the butter dripped to the bottom of the pan, where it would add no flavor to the fish. I dribbled a little more butter on halfway though cooking. The fish ended up falling though the rack in a soggy mess. Even the top portion was soggy. The reviewer said theirs came out crispy, but mine was soggy pieces of broken fish. Interestingly, I also cooked some shrimp with the same procedure and it turned out great. I will try this recipe again with a regular baking pan and hope for better results. Good luck!

Fresh Tomato Shrimp Pasta

A nice change from a heavy red or heavy white sauce, however, there really wasn't any "wow" factor for me or the family. I used fresh ingredients, with the exception of oregeno, which I had to substitute for dried. I did add raw shrimp early in the pan with the onion mixture. After the kids ate theirs' I added some red pepper for a little kick, but still nothing to write home about, especially considering the amount of work that goes into it.

Southwestern Turkey Soup

OK, did I miss something in the directions? I added my can of whole peeled tomatoes to the pot, and they remained "whole" throughout the cooking process. I had to scoop them out and dice them up and return them to the pot. The flavors are very interesting and it's not too spicy. I thought it would be a bit less chunky. I will make it again. I think adding corn to it sounds great, just didn't have any. Certainly better than the typical turkey rice soup for leftover!

Crispy Fish Fillets

I only had potato 'buds' versus potato flakes, but much to my surprise they turned out great. ( I had onced used the potato buds in a baked fish recipe that didn't turn out too good). This time I used the deep fryer. Very easy and quick recipe.

Grilled Salmon II

Yum! Yum! Yum! We eat salmon about once a week, so I am always looking for new ways to prepare it. My husband and I both loved this. Followed recipe exactly, but cooked in the oven...combination of broiling and baking. Will definitely keep this!

Baked Tofu Bites

I really wanted to like this as I am trying to eat healthier, however, I was not too impressed. Could be that I don'tt eat a lot of tofu. It didn't seem to get crispy at all. I cooked it longer and still pretty mushy. I gave some to my kids without telling them what it was and my daughter ran to the trash can to spit it out. I did end up dipping it in some hot mustard, and it tasted better then. I will keep trying to find a tofu recipe that the family will like. Thanks for submitting it, though.

Christmas Seafood Casserole

This might be better to serve in individual baking dishes. Mine came out more like a sauce to spoon over noodles. I liked the flavor, and it was pretty easy. I did add some sliced, fresh mushrooms and 1/4 sherry to the vegetables. It didn't really 'brown' either, even after putting it under the broiler for awhile. Maybe a light bread crumb topping would be a good addition. My husband loved it. Maybe if the noodles were cooked in the dish also it would be more of a casserole.

Savory Garlic Marinated Steaks

I was a little concerned about the vinegar factor after reading some reviews, but it turned out to be quite good. I only marinated for about 5 hours. I wish I hadd boiled down he extra marinade for a sauce, it was that good that you wanted to mop the steak with it.

Easy Fried Spinach

I made this as directed, except using Olive Oil because I didn't have canola. Unfortunately, I didn't find it to be anything special. My kids, who normally will eat frozen spinach from a box, called it "slimey" and "goopey" and didn't like it. I thought it was OK, but have used better cooked spinach recipes before.

Spicy Garlic Lime Chicken

Yikes! A lot spicier than I expected. Going by the directions exactly as posted, there was no "sauce" to speak of. I like spicy, but this seemed to need something to tame it a bit. The chicken was moist, but for me this was not a keeper.
