Hearty Vegetable Lasagna

I am beginning to experiment with vegetarian recipes and thought this would be a good first vegetable lasagna recipe. I found the cheese mixture too little by half. In the end, the tomato sauce dominated the flavor. The next time, I will use fresh soup greens (a quarter celery root, trimmed leak, a couple of carrots, and parsley) in lieu of the mushrooms and green bell pepper. It is hearty, though.

Homemade Black Bean Veggie Burgers

This was the first veggie burger recipe I tried. It is, basically, a good recipe. I baked the burgers a little longer than the recipe called for and they still came out too moist; they did not hold their form. Still, I will never eat frozen veggie burgers again.

Anchovy Linguine

This is a good recipe. I added the green onions as recommended by another reviewer. I also added a can of diced tomatoes with the liquid, skipping the water. Next time, I will reduce the amount of olive oil by two tablespoons. Overall, this is a keeper!

Fruitcake

This is the first fruitcake I ever tried to bake. At 225 degrees, the cake took almost two hours to bake. Though the toothpick came out clean, the cake still stuck to the pan, breaking when I took it out of the pan. The nutmeg and brandy seem to be too much. I sprinkled only about three-quarters of the brandy called for in the recipe. Next year I will half the brandy and nutmeg. While I realize my oven is not calibrated, I will likely raise the baking temperature a few degrees.

Mushroom Pork Tenderloin

This is a great way to serve pork tenderloin. I did make a couple of changes, though, since the recipe did not seem to provide enough liquid for gravy. The tenderloin was simmered in a quarter cup water. After the meat was removed from the skillet, I added a half-cup water, adding vegetable broth and heavy cream to make the gravy. Served over egg noodles, it tasted great!

Fish Fillets Italiano

This recipe is everything promised: quick, easy, and delicious. I substituted vegetable broth for the white wine and it worked just fine. A great alternative to Friday Night Fish Fry!

Chocolate Cheesecake III

This is a great recipe for chocolate cheesecake. It is not too rich or chocolaty. But, you still get full chocolate flavor. I made the crust with vanilla wafers because that was all I had available. Next time, though, I will try the graham cracker crust.

Traditional Lamb Stew

This is a great recipe for people who don't like lamb or stew. For four people who are really hungry on a cold day, though, increase the amounts given by a quarter.
