We had this for dinner last night. My husband said that this was probably his favorite baked chicken. The chicken was very juicy and had great flavor! I loved dipping it into some low fat sour cream. I served this with homemade Spanish rice, and cornbread. I think I'll be making this again very soon!

Salisbury Steak

Great recipe! I make the patties up ahead of time and freeze them, so all I have to do is thaw them out and cook them on a busy night!!! :)

Pumpkin Roll II

This is the first time I made a pumpkin roll, and I was surprised at how easy it was to make. I just worked with a towel that wrapped around my jelly roll pan so that the 3x sugar didn't fly up when I flipped it over. This pumpkin roll also freezes very well. I wrapped it in plastic wrap and then in foil.

Quick Chicken with Asparagus and Provolone

This is one of my family's favorite recipes, but my husband is the ONLY one who likes asparagus. So I make one chicken breast with asparagus, and the rest with freshly steamed broccoli. Works for us! :)

Spinach Brownies

I made these as an appetizer over the holidays. I prefer using dried minced onion vs. the actual diced onion. Overall it came out very good!!!

Sugar Coated Pecans

I had a bag of pecans leftover from my holiday baking, so I thought I'd whip these up for New Year's Eve. It was very easy!!! I did use Spenda, plus I doubled up on the cinnamon as recommended by another reviewer. The pecans have not even cooled down yet, and I can't keep my hands out of the bowl! :)

Italian Sausage Soup

Hands down my family voted this soup recipe their absolute favorite! I made this on a Saturday night and served it with Italian bread, and by Sunday afternoon for lunch the whole pot was gone! This will definitely be a keeper this winter! Forgot to add... about a 1/2 hour before soup was done I added 2 cups of zucchini (cut Julienne style.
