Chunky Monkey Pancakes

Just came back to find this recipe...2nd time in a week. Figured I better rate it because it's a keeper! Super easy, perfect texture, buttery color and consistency. My kids were flipping out over these. I made exactly as written except omitted bananas and nuts. The batch made a total of 9 pancakes that were 4-5 inches around.

Buffalo Chicken Dip

The bowl was EMPTY before half-time! I used ranch(since a friend told me the blue cheese overpowered the dip). I also used 1 stick of cream cheese and 2 poached chicken breasts, and I mixed 1 cup of chedder in before baking in a casserole dish. Next time I'll add more buffalo sauce because it was surprisingly mild and I may dice up some celery as some reviewers suggested. Overall - great and I will make again!

Apple Crisp IV

The best ever! Just came out of the oven - cooked perfectly. Cut the flour by 1/2 cup per many reviews, and mixed the apples with some lemon juice, sugar and cinnamon before layering between the crisp mix. I also added a lot more apple and sliced them thick. So GOOD! My new favorite fall recipe.

Elena's Cookies

I'm giving it 4 stars but only because I made changes...the end result was definately worth a 5. I used 1 cup whole old-fashioned oats instead of baby cereal, I used 2 bananas instead of applesauce, added only 1 stick of organic butter, and I added an extra 1/4 cup flour. It still seemed to thin so I placed the dough in my mini-muffin cups. PERFECT!! My kids gobbled them up - begged for more. I think this is as "healthy" as a great tasting cookie can get.

Avocado Feta Salsa

I followed directions except I omitted fresh oregano (i just don't like oregano in non-italian dishes). I did think it needed a little salt and pepper however. Next time I'll add a little cumin, paprika and fresh cilantro instead of the parsley. Overall, a really good recipe - fresh and lighter than your usual guacamole.

Corned Beef and Cabbage II

I made it for St.Patricks Day this year...and I will NEVER boil corned beef again. Everyone loved the flavor of the meat...I can't say we could really taste any orange flavor but maybe it helped to keep it moist. The apple and cabbage combo is great - but not everyone agreed about that one. I'll be making this every year.

Banana Banana Bread

Followed the directions to a T and it was REALLY time I will add vanilla like others suggested, a pinch of cinammon and maybe even a little more brown sugar. It was super moist but needs a little more sweetness so the kids will gobble it up!
