Chocolate Cobbler

YUM! It looks weird before you bake it, but it comes out perfect... light spongy cake with hot chocolate sauce underneath. I add a teaspoon of instant coffee granules to the hot water when I pour it on top... like many people, we ate it with vanilla ice cream!

Chocolate Rum Balls I

YUM! These were perfect....made them exactly as written! Used Sailor Jerry spiced rum, which is 92 proof, so I used just under half a cup.... these mellow after a day or two and the flavors go really well together. My family really enjoyed these. We couldn't resist popping one in our mouth each time we passed through the kitchen!

Italian Sausage Soup with Tortellini

I add spinach at the end and wilt it into the broth, and add about a cup of diced bell pepper. I also use chicken sausage to cut down on fat. This soup ROCKS...you have to make it!

Special Buttercream Frosting

Made this exactly as written. This rivals any bakery's frosting. Holds up well and piped easily. I'm not gonna lie, I licked the bowl after my cupcakes were frosted! Wouldn't change a thing about this recipe...this is my go to frosting from now on!

Downeast Maine Pumpkin Bread

Simple, delicious, dense without being heavy. I used half applesauce for half the oil and half Splenda for half of the sugar. I also added chopped walnuts. I tested this bread out on a true Maine-ah, my boyfriend is from Maine and he totally approves this bread!

Chicken Breasts Pierre

This is soooo good. I made it just as written but used EVOO to cook the chicken instead of butter. The ingredients come together to make this rich, yet surprisingly light, well balanced sauce. I did not have problems with the sauce being too sweet as others have said. If you put even amounts of sugar and vinegar, as the recipes says, you should get more of a tangy taste, not sweet. I served this with home made creamed spinach and wild rice. This goes into my dinner recipe rotation for sure!

Sesame Green Beans

Yum! I made these exactly as written except I had to use frozen green beans because my grocer was out of fresh. I did not add garlic as others suggested because I wanted to taste the toasted sesame flavor these beans have. Easy side dish that will go with almost any meal.

P.J.'s Fresh Corn Salad

I didn't have zucchini but I had frozen lima beans so I blanched them and used that instead. This was perfect for summer and a great side dish for grilled meat. My version was like a succotash, so in my house we call this "summer succotash." I would have never thought to use italian dressing with the corn, but it is VERY good!

Beef Bulgogi

Awesome! Made it just as written and served them in a lettuce wrap with asian style slaw on top. I did use a sirloin steak, cut it into strips and marinated for about 2 hours. I also boiled the marinade and used it to drizzle over the meat once it was done. Can't wait to eat this again!

Sturdy Whipped Cream Frosting

I just made this...it's chilling in the fridge until my cake is cool. It is soooo good! I used 1 cup of confectioners sugar and omitted the almond extract. I also froze my bowl and whisk attachment. Once I added the cream, it was the perfect consistency in about 3 minutes. I will be able to pipe this for a border on my cake. The taste is PERFECT...not too sweet, even though I added extra sugar and it's so smooth. This will be my go to frosting recipe from now on!

Champagne Shrimp and Pasta

This is restaraunt quality. Want to impress dinner guests? This is the recipe. I did change a few things by adding fresh spinach to the pasta and parsley when I tossed it with the cream. I also added artichoke hearts when I added the shrimp back to the sauce and thickened the sauce slightly with corn starch. MY boyfriend could not stop eating it. We literally licked the sauce out of the pan! This is one of the best recipes I have ever made in my kitchen! I can't wait to make it again.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Strawberry Torte

I also cheated and folded in store bought whipped cream. Instead of making the sauce, I melted down seedless strawberry preserves and drizzled it on the berries which were fresh, not frozen. I tweaked this a bit, by using my cheats, but OMG is this thing delicious! It's like strawberry shortcake collides with strawberry cheescake...decadent!

Oatmeal Peanut Butter Cookies III

These are FANTASTIC! I made the recipe exactly as written. I whipped the filling mixture with my beater for about 2 minutes to make it light and fluffy. I also dipped half of my batch in home made chocolate ganache. So much for the New Year's diet!

Juicy Roasted Chicken

This is the juciest, most tender chicken my boyfriend and I have ever made. It's a little bland, but next time we make it I will just add some rosemary and garlic cloves under the skin. YUM!
