About this Cook
I love to work in the kitchen, whether it's mixing drinks or baking cookies. I think I'm a pretty good cook and most people compliment my cooking, but there's always room for improvement. Someday I'm gonna be able to whip up some great gourmet cuisine!
My favorite things to cook
Baking and desserts are my favorite ways to spend time in the kitchen. Appetizers and party foods are also fun things to make.
My favorite family cooking traditions
Chex Mix during the holidays... Every Christmas since I can remember, my dad and my uncle make a HUGE batch of their famous home made Chex mix. It's become one of the highlights of our time together. Everyone gathers in the kitchen awaiting their first handful while the mix bakes in the oven. I'm still not exactly sure what ingredients are in the sauce, and I've been watching them make it for over 20 years now. Somehow my dad and my uncle have kept it all secret.
My cooking triumphs
My hot Spinach and Artichoke dip. After browsing a bunch of recipes for the dip, I took what I liked from each one and made my own version. I never thought it would be so popular...I am constantly asked to bring my dip to parties, gatherings and holiday dinners. Cheesecakes are another I'm proud of. After making the double layer pumpkin cheescake from this website, I've experimented with many different flavors and have multiple requests for custom flavors! They are so fun to make!
My cooking tragedies
I burnt rice to the bottom of a pan once. It was sooo hard to get out!

Double Layer Pumpkin Cheesecake
Giving it 4 because I used this recipe as my inspiration... I've been making double layer pumpkin cheesecake for years now and it's everyone's first holiday request. I double the ingredients, use canned pumpkin pie mix, and make a home made gingersnap crust. I use my spring form pan. Done this way, it looks professional. It's taller and thicker and when you slice it you can see the contrast between the dark crust, white layer and orange pumpkin on top... it's very pretty and just as delicious!

Lasagna Alfredo
4 stars because I tweaked it a little...add minced garlic... I put mine in the chicken mixture, def makes a difference. I also cut the mozz cheese back a little to lighten it calorie wise... I will keep this in my rotation. I also served it with red sauce on the side to drizzle on top, really good that way.

Sherry Apple Pork Chops
This rocks! I did add my own touch, which is why I will give it 4 stars... first, I seasoned the chops very well with salt and pepper. I seared them until good and brown in EVOO/butter. Then I tossed in the apples and some thinly sliced onion. I sprinkled the brown sugar and cinnamon on top and splashed the sherry over the whole thing. A little extra pinch of salt and pepper and I covered this and let it all simmer on the stove top, about 15 more min. At the very end, I added a little corn starch slurry to thicken the juices. My hubby and I devoured our chops and were picking at the remaining apples that were left in the pan... perfectly sweet and savory.
