Amy's Barbecue Chicken Salad

This salad was delish...gave it 4 for just a few variations (I think). I used mostly spinach with a little fresh romaine mixed in, mixed up the black beans, corn and cilantro before putting on the salad. I also seasoned the chicken and used barbecue sauce before cooking the chicken instead of dipping on the side. Added sliced avocado and red onion, used salsa as a dressing and a dollup of low fat sour cream...the leftovers are even better!

Buffalo Chicken Dip

I only gave this recipe 4 stars b/c I made SLIGHT variations--this is wildly popular with guests! I only use 1 pack of the cream cheese, I mix white italian cheese (mozzarella or whatever i have on hand) as well as Cheddar/Jack Mix. In addition to this I add about 1 tbs. butter (maybe less)--I found that this prevents the coagulated cheese effect--I put ALL ingredients in the crock pot (start with softened cream cheese to get it melting), and add the cheese slowly. Superbowl party hit!

Cranberry, Sausage and Apple Stuffing

This was my first time making homemade stuffing...and it was delicious. I pretty much followed the recipe as is (I didn't peer over it the entire time but tried to follow it as closely as possible). the one change I made and suggest folks try it is I used slices of RYE and PUMPERNICKLE (sp) bread--the flavors molded ever so nicely...will make this again for sure!

Sausage Spinach Alfredo Lasagna

I'll give this one 5 stars but I made many modifications. I used a 9x9 pan but DID NOT half the recipe. I used 1/2 lb sausage and 1/2 lb ground turkey which i cooked with some fresh minced garlic (1-2 cloves) and some sliced onion as well as salt, pepper, and some italian seasoning. I used a premade alfredo sauce (which was very salty) and added a clove of garlic to that. I totally forgot to thaw the spinach so i cooked it in the microwave and just added it to the meat mixture which was already put aside in a bowl. I too omitted the cheddar and just used a mixed italian cheese. Had no problem with it drying out, recommend reserving some alfredo sauce for the top layer--just enough for a thin layer. Nice job!

Chicken and Broccoli Braid

had some extra broccoli that needed to be used and i'm not a fan of it just as a side dish. I too made this as a ring with only one package of crescent rolls rather than 2 as I only needed enough to feed 2. I made 2 chicken breasts marinated in balsamic vinegar, extra virgin olive oil, some italian seasoning, garlic clove, and dill. I cooked the chicken in the grill pan then let it cool a bit and chopped. I used about 1 c. broccoli, about 1/2 c. red pepper (love red pepper) and some scallions (both ends, and cheddar and mixed it all together. Used the egg white brush on top and then put some sliced almonds around. Even after assembly I had to refrigerate it, popped it into the oven at 375 before it was preheated and it was done in about 20 minutes. easy, different idea...

Taco Lasagna

this recipe was easy and delicious. I pretty much followed it, just 1/2'ed it. Used corn tortillas (they were smaller and easier to handle, not to mention cheaper). I spread refried beans onto the tortillas as i placed them in there and layered it in an 8x8 pan. I left out the sour cream IN the recipe, served it on the side, and sliced up some roma tomatoes and sprinkled on top when it came out of the oven. Made for GREAT leftovers too!
