BLT Chicken Salad

I make this salad all the time! It's wonderful and filling. Make the dressing in advance when possible to let the flavors meld. I've mixed and matched all kinds of different salad fixin's like carrots, olives, peppers, etc...grilling the chicken makes it even better!

Grilled Chicken Quesadillas

These were good. I used the Forman Grill. I marinated the chicken in McCormick Baja Marinade, grilled and chopped. I also didn't have green chilies on hand, but next time, I'll be sure use them. Served with pico de gallo and sour cream.

Tres Leches (Milk Cake)

I really didn't like this cake. I doubt I would like any recipe for it. It was so bland. The best part was the cool whip I used for the topping. Will not try again.

Kentucky Biscuits

I've made these biscuits for almost 20 years. I add a little more than a dash of salt and a little more than a Tb of sugar. I also cut them out with a cutter and bake about 16-18 minutes on 375 or until browning begins. I use them for shortcake, sausage gravy (less sugar) or just for dinner. The trick is not to work the dough anymore than necessary, I think 2 minutes is quite excessive. I've won a blue ribbons several times with these!

Sweet Dinner Rolls

These are very good rolls. And yes, they ARE sweet, they would make excellent cinnamon rolls so if you're looking for something to use as garlic bread or rolls, skip this one. Great for danishes!

Rosemary Cheddar Bread

Everyone in the family loved this bread. I would cut the sugar back to just a Tbsp to proof the yeast. I also rolled the dough out and sprinkled the chesse and rolled it up for a "swirl" bread. Excellent!

Red Velvet Cake

I used 3 eggs and used the whole bottle of red food coloring, plus a little in another bottle. Excellent. And I might add, I don't think it's Red Velvet Cake unless you use this frosting!! Superb!

Tiny Chicken Turnovers

I followed the directions for the most part. I think 1 cup of butter is entirely too much. I used about 1/2 of a stick and about 1/2 cup crisco. I also used to the food processor and chopped onion, celery and carrots, (not too fine), then sauted them. Added the chicken, then the seasonings and cheese and a little garlic powder. As with anything I'm making I taste it to see if it needs anything, I added a little more salt and pepper. These are EXCELLENT! Hubby said "Can we have these for dinner?" lol Next time I might try mushrooms and black olives with the chicken. A million ways to use this dough by adding the right spice to it, for instance, cayanne and use Bleu Cheese and buffalo sauce with the chicken...oh my.... :)

Apricot Pork Chops

These were very good. I mixed up the sauce early in the day so the flavors would blend. I baked them covered in the oven at 300 for about a half hour then bumped up the heat to 350 and uncovered them for another half hour. Sauce was nice and thick and chops tender. Will make again.

Restaurant-Style Tequila Lime Chicken

I used equal parts of Chi Chi's orginial Salsa and light ranch dressing for the sauce. Works great! You can change the flavor slightly by the using different brands of both. This is on the rich side, I served with yellow rice. Have made several times.

Maple Apple Crisp

Because I like my apples a little more tender, I cooked them for a couple minutes first. Drained them. Placed them in the baking dish. Gave them a sprinkle of sugar and poured on the syrup. Then topped and baked. Served with ice cream. Excellent. This one I'll keep for another rainy cold day!

Pumpkin-Apple Muffins with Streusel Topping

These were a hit! Perfect for a frosty fall morning. I would make the salt total 1 tsp the next time. I also added some walnuts to half the batter. This yielded about 27 muffins, so there wasn't quite enough streusel. I'll use the excess batter to make some mini loaves.

Chicken Lo Mein

This was really good. I also didn't use the cup of water. Just a can of chicken broth and the other liquids. I added some broccoli, celery and carrots because I had them on hand and needed to use them. I'll make this again, absolutely. :)

Cheesy Pesto Bread

I'm giving 4 stars because I don't really think you need any garlic salt with the pesto. I thought it was too much garlic. I have made twice, once as written and once with homemade flat bread. Will make again.

Cinnamon Swirl Orange Bread

This was excellent. I would add more cinnamon to the filling, and instead of water, I might try spreading the rolled out dough with butter first, then sprinkle the cinnamon sugar on. The bread dough is fabulous! Will make for gifts.

Zesty Slow Cooker Chicken Barbecue

This was a hit with the family. I used fresh chicken, great value bbq sauce. The sauce was thin so I used a very small amount of thickening. It made it thicker and a bit smoother. Great dish.
