Brown Sugar Banana Bread

Phenomenal banana bread recipe! Very flavorful, moist and full of great banana flavor. I only made a couple minor mods to the original recipe: I cut the butter down to 2 tbl., only used 1/2 c. brown sugar and substituted whole wheat four for the AP. With the flour switch, I was nervous that the texture would be 'off,' but I was wrong! It turned out super moist and perfect...and the sweetness from the 4 bananas more than made up for the brown sugar I cut out. Excellent recipe...will definitely make it again and again!

Black Beans a la Olla

I loved this recipe! I was skeptical at first, assuming it was going to be bland or boring...but nope, I was WRONG. The beans, along with the freshly diced tomatoes and onions were super good. I like a lot of heat, so I added more cayenne than recommended. Served this with turkey burgers and sweet potato fries last night for a perfectly spicy meal. My boyfriend wasn't sure if he liked it or not, since he is used to the standard baked beans as a side dish. I think next time I will either serve it over rice or add some water/extra tomato sauce to it to make it into a chili.

Mushroom Blue Cheese Turkey Burgers

AWESOME turkey burger that was moist and FULL of flavor!!! I am usually not a huge fan of turkey burgers (too try and flavorless), and my red-meat-loving boyfriend never eats them..but I saw this recipe and had to give it a try. I didn't have any blue cheese on hand, so I melted a slice of colby-jack on top instead. Once I took a bit out of this, I was blown away! The mushrooms and soy sauce give this burger a nice flavor and it was as juicy as ground beef. My boyfriend even complimented me on making these. I'm definitely making these all summer..with or without the blue cheese!

Bubble Pizza

Yummy and really easy to make..I wouldn't really make any changes to this next time, except for maybe cutting down the recipe to only using 1 container of biscuits instead of 2. It seemed as though 2 was a bit much for the pan..other than that, great recipe, my boyfriend loved it!

Hot Fudge Pudding Cake III

Easy recipe for a quick chocolate fix. Instead of white sugar, I used Splenda which caused the texture to be a little weird. The cake tasted better as leftovers, heated up and topped with Cool whip.

Baked Cod with Boursin Herb Cheese

Very easy and yummy way to fix fish. Instead of Boursin, I used two wedges of Laughing Cow Garlic and Herb cheese, which was less fat but just as good. I also cut the butter down to 1 tbl. since it was just the two of us and I only had 1/2 lb. of fish. Excellent Valentine Meal!

Vietnamese Fresh Spring Rolls

Tunnel of Fudge Cake II

My SO made this for my birthday this past month and it was a hit at my party! I will agree with other posters that while the flavor is good and the filling is the best part, the cake part is a bit dry and dense, but that can easily be resolved by putting a slice in the microwave before eating. Adding a scoop of vanilla ice cream on the side does wonders as well!

Beef Enchiladas

I have been making these for over 10 years now..it was one of the first recipes I made from scratch as a kid out of college. I love combination of flavors..you can make different adjustments to this recipe with great results..such as adding more spice, hot peppers or substituting low fat cheese. A great weeknight dish.

Kitty Litter Cake

I made this for an office Halloween party 6 years ago and it was a hit! Not many people tasted it (due to it looking really nasty), but they still loved it. To get in the theme of things, my co worker and I dressed up as cats. :)

Udon Peanut Butter Noodles

EXCELLENT recipe! I have made this twice now, both times with boneless, skinless chicken breasts sauteed in sesame oil in lieu of rotisserie chicken. I also added a sprinkle of crushed red pepper flakes to give it that extra little zing! (We like it spicy in our house) Easy, easy recipe with fantastic flavor. Two thumbs up!

Bertolli Baked Eggplant Parmigiana

This was great! I had several little eggplants that I didn't know what to do with and this recipe saved them from being thrown out. I followed the recipe as directed (using olive oil to grease the baking sheet) and was pleasantly surprised how rich and 'meaty' it tasted despite being a vegetarian dish! Had the leftovers for lunch today and I must say, it reheated well. I'll definitely make this one again and again.

Make-Ahead Spinach Manicotti

I made this for my boyfriend's birthday earlier this year and we both agreed..while it tasted ok and had definite potential, the amount of sauce was waaaaayyy too much. 2 jars literally overwhelmed the rest of the ingredients. The manicotti was swimming in a pool of spaghetti sauce. I'd like to give this recipe another try, but this time will cut back on the sauce by at least half. I might also add some spicy sausage to it as well.

Creamy Hash Browns

I fixed these for a family BBQ yesterday and everyone LOVED them. I went the healthier route and used shredded frozen hashbrowns, lowfat cream soups, reduced fat shredded cheddar, fat free sour cream, onion powder, and 4 tbls of melted real butter, I didn't have any bacon on hand, so I omitted that. They cooked up nice and creamy and everybody raved over them! An excellent potluck side dish...can't wait to dig into the leftovers tonight...

I made these as I was scheduled to bring treats for the weekly department meeting...my co-workers were tickled pink at these fun cookies! They're not the most scrumptious as far as taste goes, but they certainly gather some attention! Cute idea..

Chocolate Peanut Butter Cups

My Boyfriends made these for me as a surprise one day (I had been talking about craving a Reeses)...I mist say, I was certainly impressed! These blew the store-bought kind out of the ballpark! He used dark chocolate instead of milk (baking squares instead of chips) and just good ol' Jif creamy PB. I think I ate three of them in one sitting! We kept the remaining treats in the freezer so that they didn't get all melty. What a perfect bit-sized treat to satisfy my Choco+PB craving!!! :)

Soooo easy, yet sooooo good! I used organic graham cracker sheets, fat free Cool Whip and ommitted the chocolate chips. A yummy, lo-cal treat for when you are craving ice cream sandwiches! Yippee!!

Dark Chocolate Bacon Cupcakes

I made this yesterday for my bacon-fanatic boyfriend and while, we both agreed they were good in taste (esp the chocolate cupcake part), his co-workers did not agree. I don't think any of them even tried them once they found out there was bacon inside! As I type this, he is having trouble getting anyone to try one! C'mon people, don't FEAR THE BACON!!!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Super simple recipe! I used store-bought cookie dough from Papa Murphys Pizza instead of making it homemade. Baked for the required amount of time, however, the cookie ended up fully baking instead of holding the 'cookie dough' consistency. No worries, it still tastes great anyway, and safe for all the pregnant co-workers at my office! Love this recipe for its simplicity!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Very easy to make and hits the chocolate spot! The only problem I had with them was when I took my first batch out, the brownie center was still pretty raw. I ended up baking the remaining cupcakes for an extra 4 minutes, and they turned out perfectly! Frosted with a can of chocolate frosting, since I didn't have time to make homemade. I would definitely love to try these with different flavors of cake mix and peanut butter frosting!
