Smothered Mexican Lasagna

Very good - I omit a star because I changed it a bit after the initial go-around. I didn't care for the ricotta (personal preference) and so used shredded mozz/cheddar instead. Also, I use a little hot salsa in addition to the veggies listed - gives it a little oomph. Good basic recipe, though, and I do use it quite frequently. It's also good cut in small squares as an app on game day!

Homemade Fresh Cheese

Portobello Mushroom Burgers

Excellent! I've done these both under the broiler and on the grill. Sometimes I add extra chopped veggies to clean out the crisper, but the recipe is fantastic as is! Thanks!

Stuffed Shells I

Okay, okay - I made this with homemade ricotta (using sunflower17's Homemade Fresh Cheese recipe from allrecipes.com) and with homemade tomato sauce - BUT - the rest of the seasonings, cook time, etc. worked wonderfully - this was my first go-around with stuffed shells, and I just stuffed them with my hands. Cook the shells VERY al dente (my package said to cook for 14-15 minutes, and I cooked for 7) and you won't have any problems stuffing them at all. A great recipe - I think it would have been great with jarred sauce, too, but just felt like going the homemade route this time. Thanks!

Michelle's Blonde Chicken Chili

Very nice recipe - I used leftover chicken that had already been cooked. Didn't have any green chilies on hand, so I used plain ol' green pepper to give it some color. I think the chilis might have spiced it up a little more, but it was still great. Nice, fast recipe with many staple ingredients - I'll be making it again.

Cottage Cheese Chicken Enchiladas

Only so-so. The cottage cheese was a little lumpy for my taste - that particular texture really killed the dish for me. Husband said it was better as a leftover.

Creamy Penne Pasta

Excellent! I had some leftover chicken that I shredded and added, as well as some shrimp. Mixed it with the pasta in a casserole dish and sprinkled some shredded romano over the top and popped it in the over for about ten minutes. Yummy! Beware, though, if you don't care for basil, you may not like this recipe - had a very strong flavor, but was absolutely delicious!

Coq Au Vin, My Way

Cheesy Brat Stew for the Slow Cooker

Was excited to use this as a new way to use leftover already-grilled brats, so I didn't have the grease issue - however, it was VERY thin, even after I added quite a bit of Velveeta - more like a soup than a stew. Used beer instead of water, but it still needed some oomph, so I drained some tomatoes and chilies and added those. That helped quite a bit. Husband and I did a no-no and mixed starches - served this over rice, and it wasn't too bad, but I doubt I'll make it again. Would rather just warm up the brats and make some cheese fries.
