About this Cook
I am a 36 year old Stay-At-Home-Mom (SAHM) of 4 children and 2 step-children. Our oldest is 17 and our youngest is 9 months. I Love to cook for my family. On a bad day, cooking can transform my mood, and make my family happy.
My favorite things to cook
Mexican, Italian, and slow cooker "easies". I am good at those, but would like to perfect my dessert side. DH LOVES pies, and they scare me. So simple, I'm afraid to screw up on them.
My favorite family cooking traditions
Making pumpkin cookies and mulled cider in the fall, cinnamon rolls and homemade hot chocolate in the winter, strawberry cake and lemonade in the spring, blueberry pancakes and peach smoothies in the summer.
My cooking triumphs
Hosting a large Winter Solstice dinner party for 12 with prime rib, herbed potatoes, broccoli salad, homemade rosemary bread with dipping oil, and a Black Forest cake from scratch. I also served alongside the wine, my homemade cranberry liquer. It actually was all a success. I did sweat a little though. (Okay, a lot!)
My cooking tragedies
At 16 I tried making my boyfriend Chile Verde. I didn't know exactly what a "clove" of garlic was...I thought it was the whole bulb! Do 4 of those in a pot! I learned a bit about garlic that day. He was sweet and ate it though. Poor guy.

Mouse's Macaroni and Cheese
I don't bake it because the kids don't like a "crust" on top of anything. Delicious baked or just off the stove. Just off the stove, the kids say it tastes just like Outback's kid mac and cheese. Very Yummy.

Chicken Cordon Bleu II
Absolutely delicious. A family favorite! Don't leave out the wine, it makes a BIG difference.

Cherry Cobbler I
This is fantastic. We bought 10 pounds of cherries at the farmer's market so I had to start doing something with them. I don't like cobbler type stuff but had seconds on this! I had no problem with the crust at all. It had a beautiful shiny crunchy topping and had a gorgeous color and texture on the inside. I cut water to 3/4 cup and really got it boiling and stirred until it was all dissolved then put the bowl in the microwave for one more minute (just to make sure the cornstarch got going on the thickening) then poured it over the batter. I baked it for 1 hour. Superb with vanilla ice cream! (For those of you who thought it was sickeningly sweet, did you accidentally use canned filling?)
