Hamburger Vegetable Soup

This was great! Just made it tonight. The kids didn't think they would like it when they looked at it, but once they tried it, they liked it! I only had one 1 oz. envelope of onion soup mix, but that seemed to be enough. Also, I didn't have tomato sauce, so I added a can of diced tomatoes with garlic, basil and oregano. I used half of a large onion, and that was plenty. This is going in my "keeper" notebook.

Coffee Marinated Steak

This was wonderful! We have steak quite often and this will be a regular in our rotation now. My hubby is a big coffee fan, so he was excited. I don't drink coffee myself, but loved the steak. It was a very rich tasting steak, and if you didn't know there was coffee involved, I don't think you would guess it. Wouldn't change a thing about the recipe. Thanks!

Pasta and Herbs

I've made this pasta at least 3 times now, and I love it. I usually only have one or two of the fresh herbs, so I just use about a third dried for the ones I don't have fresh. One of these days I'll have them all fresh and I'm sure it will be even better! Also, I've never added the olives just because I'm not a big olive person and I rarely have them on hand - but I plan to try it with the olives sometime too.

Roquefort Pear Salad

This was a wow salad. Made it last night for guests. Everyone raved. I couldn't find Roquefort at my grocery store, though, so I used regular blue cheese. I can't wait to make this again!

Tender Italian Baked Chicken

Quick and easy, very moist. My 2 year old loved it too. I used chicken breast tenders and I admit I didn't measure anything, but it turned out great! I served them with mashed potatoes and gravy and cooked veggies. I will make these again. Thanks.
