Spicy Bean Salsa
This is a wonderfull fresh salsa. Is awesome with white corn chips, with chicken or fish, as a side dish or even as a complete meal on a hot summers night. The only changes that I made were replaced the jalepenos with 1 can mild green chilies (to appeal to all people) used a whole green pepper, red onion instead of white, added 1 ripe mango, fresh tomato instead of canned (too juicy and mushy) and added a really good steak seasoning which includes course salt, pepper, garlic and a few other seasonings. The pepper from the seasoning will give it the "bite" that it needs. I highly recommend only using 1/4 cup of the dressing.

Country Chicken Casserole
Was a good combination. Made some changes. Used alot more than the 3 cups of hash browns. Browned them first to make crispy. Used two cans of cream of mushroom with half & half. Used combination of colby/mozzarella cheese and added a can of diced green chiles. Will use green beans next time as the "yellow" corn made the dish look blah. I think I will brown the hash browns with red bellpepper next time. Overall good comfort food and simple to throw together.
