Rosemary Zucchini Sticks

5 stars and super tasty, although I did a few things different... I coated them using 3 covered bowls to toss them in: 1st: flour (1 cup), then 2nd: eggs (2) and then 3rd I tossed them in the bread crumb mixture. The only thing I did different for the bread crumb mix was to add minced garlic and I used basil instead of rosemary. This method coated them very well. I serve them with ranch dressing for dipping and WOW, they were absolutely WONDERFUL - as yummy as what you'd get at a restaurant as an appetizer, but without the mess and fat of deep frying! Great, fun side or appetizer to serve guests! (This all coming from a person who isn't even crazy about zucchini usually!) NOTE: You can make these up to 3 hours in advance before cooking. Also, I used parchment paper this time instead of oil and they were not near as good. I would definitely recommend using olive oil on a baking sheet as mine taste much better that way!

Stracciatella II

I'd love to try it as directed, but this was quick and easier and what I had on hand. Here's what I did different: 1) I only had chicken breast on hand, so I boiled two large ones whole with veggies like step one says to, but I added chicken bouillon because I didn't have the carcass to provide flavor. 2) Instead of cooling the broth and blending it with a portion of veggies, I put all the veggies in at the beginning. Then after 45 min. I scooped out about 1/2 the veggies and just blended them with a hand mixer and then added it back into the soup along with the chicken after I chopped them into small pieces. 3) In step four, it calls for 3 cans of broth to pour the eggs into, but I only used about 1 1/2 cans and I had more than enough liquid in my soup. One more thing... b/c I used bouillon for flavor in step one, it was a little salty, so I would omit the salt if I made it this way again.

Filipino Pork Adobo

I followed the recipe except that I used a little less pork than was called for. We couldn't even eat the pork because it was so incredibly salty! I didn't add any salt, so it was just the soy sauce I used. B/c the other 2 reviews didn't mention the saltiness, I wonder if it is the type of soy sauce I used (an authentic Chinese brand). I'm giving this 2 stars and not 1 star, thinking that the recipe might have good potential if not for the soy sauce I used that made it 10 times too salty to eat!

Beer Cheese Philly Steak Casserole

This was between 3 and 4 stars for me. I think it's a great recipe, but I didn't expect it to taste so much like beer. I think if I make this again, I'd maybe use beef boullion or cook some of the alcohol out of the beer. It was just too overpowering for me since I wanted to taste Philly cheese steak, not beer. But, in general I think it's a great idea for a casserole and everything else about it was good!

Sausage and Wild Rice Stuffing

I have to say I was not impressed. I made this just as a casserole, not used as a stuffing, thinking it sounded like a nice change and different flavor, but my family of 4 did not care for it at all. Maybe the recipe is good, but it just didn't fit out taste!?

BUSH'S® Garbanzo Pesto Dip

I would actually put this between 3 and 4 stars, but I'll rate it 4 for the potential. I made this recipe as directed using red peppers. It's a great idea, but it just seemed to be missing some "umph". I added a little more pesto and some salt and it helped, but I'm still not satisfied (but I'm a perfectionist with cooking :) I wonder if the Sun Dried Tomatoes would have been a better option than the red peppers to get that extra flavor it needed?! The crackers may matter too. I ate it with Multigrain Wheat Thins and then tried it with some new Colby Cheese Wheat Thins and for some reason the flavors of the dip came out a lot more with the Colby ones. It was still not perfect, but a lot better. Also I used a hand blender to mix it a little better b/c it was too chunky for me.

Vegetable Feta Rice

Great idea if you want to try something new with rice. I always end up tweaking recipes. Here's what I did: Cooked the rice in chicken broth with a little butter and minced onion. Then afterward I added a bunch of oregano, some garlic powder, salt and pepper and a little bit of Tomato, Basil and Garlic Mrs. Dash. I didn't use celery and cooked my onion first and it was really good. I also had some leftover pork roast that I decided to throw in at the last minute and it actually worked really well our main dish. The cucumber and feta reminded me of greek salad, so next time I think I'll try adding tomatoes.

Key Lime Pie VIII

I've tried other recipes and this is the BEST. I also like "Easy Key Lime Pie I", but I made both for some friends and this pie won hands down! It has a better "sour" twist to it. I followed the recipe to a tee and it was perfect. No need to tweek it at all!

Easy Key Lime Pie I

I am giving this 5 starts b/c it's great. However, I made 2 different versions, this one and "Key Lime Pie VIII" for friends and the other pie won hands down. This one is smooth and creamy, but very sweet - the other is just the right "sour". In making this one, definitely do: 1 c. lime juice, 4 yolks and 2 cans of sweetened condensed milk!

Vegetable Beef Stroganoff

This tasted great and was easy, but it's just a basic outline to work with. I had already marinated some beef strips in worcestershire and soy sauce, so that helped with the flavor I'm sure. I used carrots and peas in mine as broccoli just didn't sound good. I added little extra sour cream (about 1 1/2c.)and some seasoning salt. The only other change was spiral pasta noodles instead of egg noodles b/c I didn't have any. Since they take longer, I cooked them partially before adding to the beef, but it turned out good. It's not quite "5 star amazing", but it's a great basic, quick and easy recipe that you play around with.

Cheesecake Brownies

If you're out of brownie mix like me, I suggest using "Brooke's Best Bombshell Brownies". I just omitted the chocolate chips (which I'm sure would have still be good) and then put the cream cheese layer on top. My son did ask me if my brownies were sick, so as you can tell they didn't look that great! I couldn't get much chocolate mix to come through when I swirled it so it's mostly white on top. Next time I'll save a little batter and dribble it on top so it swirls better. They were a bit gooey, so I'll cook them lower for longer than 45min. next time, but they did taste great!
