Mom's Stovetop Pork Ribs

This were delicious. I think it can be safely said thes are the best ribs I've ever had. Really. I followed the recipe exactly, except doubled it. It took around 2.5 hours for the liquid to reduce; however, I reserved the last 1/2 inch to use as a gravy. Served the ribs & gravy w/mashed potatoes. So good. However, the ribs were so tender they probably should have been served with something less mushy and more firm. This recipe deserves 5 stars, for sure!

Chicken with Quinoa and Veggies

I really enjoyed this recipe; it was a nice combination of flavors that I love, combined in a way I'd never thought of. It's a good replacement for a pasta-based dish. Even my 4 & 10 yo enjoyed it! Next time I will double the recipe.

Stephan's Broiled Salmon Pesto

Candied Jalapenos

I did not follow the recipe, but used it for the right proportions. I wanted something quicker than a week. I used two small cans of diced jalapenos and 5oz of sugar - combined over heat until boiling; let it cool and spread over cream cheese and dipped pretzel in it. Delish! I will definitely give the original recipe a try.

Easy Sausage Strata

This was really good. I used plain old white bread because that's all we had - I think it would be a lot better with a crustier, more seasoned bread. Next time I will try a french baguette bread that is pre-seasoned. I also did not refrigerate - I'm not sure what benefit this would provide. It turned out fine without the refrigeration.

Roast Beef Burritos

Easy and tasty, will make again. I followed recipe; however, next time I will bake in the oven for a bit with some sauce and cheese on top of the burritos. We stored the excess filling and used it up over the next few days - even better as leftovers and all the flavors meld together! yum.

Savory Vegetable Beef Stew

This stew was absolutely delicious. We all could not get enough, even the kids were begging for leftovers the next day. I ended up using balsamic vinaigrette dressing because that was all I had; I omitted the green pepper and ended up adding another cup of water and a few Tbsp of dressing. Don't add the water/flour mixture at the end. I ended up fishing out flour balls. I replaced with a water/cornstarch mixture -- the end result was wonderful. We added bisquick dumplings to top it off - YUM!

Chicken Breasts Pierre

Easy and delicious. While I wanted to try the wine substitute, I didn't since we have three young children. The flavor was still rich with a nice balance of acid. I especially enjoyed it and next time will at least double the amount of sauces. We served over white rice.

Puff Pastry Salmon

This was delicious. I ended up cutting a 14 oz salmon fillet into thirds, and I was able to completely wrap them w/2 sheets of pastry puff. Next time I will roll the dough out so I can get more out of it. I used fresh chopped spinach and Classico pesto. My husband really enjoyed this dish and ate his entire serving!

Crispy and Tender Baked Chicken Thighs

Did not use the spray, but did use a blend of melted butter and olive oil to brush onto thighs before sprinkling with the herb mixture. The whole family really enjoyed this meal. Served with risotto and a garden salad.

My Crispy Mashed Potato Pancake

This is a great way to use up those leftover mashed potatoes! I doubled the recipe, but omitted the garlic and chives - as we always make our mashed potatoes with chicken stock and real garlic - so they are very flavorful to start. My kids really liked them with sour cream. Will make again.

Slammin' Salmon

Wasn't crazy about this recipe; however, we baked the fish instead of grilling - and I think that the grill would have given this recipe an added dimension that would have complimented the flavors better than baking. I thought there was a lot going on flavor wise - maybe a little too much for my preference. The kids weren't that crazy about it either, but my husband did enjoy it. If I try this recipe again I will reduce some of the seasonings and definitely grill it.
