Tina's Shortbread Chocolate Chip Cookies

Mmm this was good. I got less than 2 doz but my cookies must be bigger...The changes I made were: used 1/2 tsp vanilla, chopped pecans instead of walnuts, no chocolate, baked at 325 for about 25 min. MMM delish! Next time maybe I'll try the chocolate or maybe orange peel or lemon. Lots of possibilities!

Hummus III

Yum! And easily adaptable to taste buds. I used 1 15 oz can of organic garbanzo beans, partially drained, a little less lemon juice, I thought the tahini amount was perfect, more garlic (3-4 cloves) and a few roasted red peppers. I used less olive oil (just eyeballed it, 1 tbsp seemed like a lot).

Whole Wheat Banana Nut Bread

Yum! I was so happy to find a healthy banana bread recipe! I used 3 large bananas (probably more than 1 cup), omitted the oil and replaced it with apple sauce and also added some cinnamon, nutmeg and a couple tspoons of cocoa powder (unsweetened). I left out the walnuts and used raisins instead. Thinking dates would go well as a sub too. Best banana bread I've made!

White Bean Soup

Great start, though I admit I modified this recipe so much I might as well call it my own now. I sauted 1/2 a white onion, garlic cloves and a tsp of basil in the olive oil. Then added 2 carrots chopped (no corn), then 2 cans of beans, 1 14.5 oz can of no salt diced tomatoes, 4 c of chicken broth and some other spice blends I thought sounded good. Simmered for an hour, pureed and yum! Healthy and easy. Great with grilled cheese
