Whit's Chicken Enchiladas

Very good as is. Next time I will also saute onion with the garlic and japalenos. I think smaller tortillas would have been better also. I will make this again!

Very Easy and Good! I like to use a mix of chicken, sausage and shrimp. I always add a pinch or two of sugar to the sauce. It's a nice balance with the spice. Everyone I have ever served this to loved it!

Chicken Wing Dip

Very Good Dip! I use low fat (not fat free) ranch and cream cheese. I also use equal parts ranch and hot sauce. Any kind of shredded cheese will work. This recipe is good hot or cold!

Creamy Baked Chicken

Very Good and Easy! I added Garlic Powder as well. Served with Mashed Potatoes. I will prepare this one again. I think it could be done in the Slow Cooker too.

Chicken Enchilada Casserole II

This has become a family favorite!! This recipe is also very good with Black Beans or Corn Tortillas. Very easy for a spur of the moment dinner as I always have all of the ingredients on hand.
