I struggled with getting the roast up to temp. I followed the instructions, however, my roast was closer to 4 lbs so I tried to compensate and cook accordingly. By the time the 2.5 hours was up, the roast was only at 135 so I had to turn the oven back on and cook for about another hour. I took it out at 140 and tented it and it finally came up to 145... it just took forever. The roast was OK. It could be more tender, but it was not too tough either. I made simple beef flavored gravy to accompany this dish and I am very glad I did. I personally think this cut of meat is bland and the gravy definitely perked it up.
