White Chocolate Blondies

This is the dessert that is most requested at my office. I use white chocolate chips instead of the semi-sweet chocolate chips. I also add 1/2 cup of chopped macadamia nuts and 1/2 cup of flaked coconut to the batter, folding into the batter with the chips. It is a very moist, fudge-like blondie. My oven requires a cooking time of 30 minutes. Easy and delicious!

Red Skinned Potato Salad

I doubled this recipe (with the exception of the onion) and took half to my office party and left half at home with the family. There were no leftovers from either place and I received many requests for the recipe. Very easy with a great flavor. I used a tip from a co-worker to cook the bacon ... place the entire pound on a foil-lined jelly roll pan, bake for one hour at 350 degrees, turning the bacon over at the half hour. It was a great time saver and clean up was a snap.

English Muffin Breakfast Strata

I made this for Christmas breakfast and it was a big hit with my family. I assembled it the night before, placed in the fridge, then baked as directed Christmas morning. I only used one package of English muffins and added two additional eggs. Easy, delicious, and flavorful.
