Waikiki Meatballs

I'm not in to sweet & sour but hubby is. He came back for seconds and said it I could make it again and quite frankly I thought it was good too. The other two adults in the house said it was too sweet. The 1 1/2 year old ate it up. I didn't think the meatballs were anything spectacular more like meatloaf but they were moist and most of mine held together well. I made five pounds of meat so I could have some leftover meatballs for lunches which was about two frying pans full of large meatballs. I withheld one pan of meatballs from the sauce. With that I tripled the sauce which was just about right for one pan of good size meatballs. So I would definitely double the sauce with recipe as written. I bought 20 oz sweetened pineapple chunks and used all the juice from both cans (I tripled the sauce) and about 1 1/2 cans of pineapple chunks. Next time I will buy one sweetened and one unsweetened and see if that doesn't fix the sweet issue and I may cut back on the pineapple chunks too. Adding another table spoon of soy sauce and maybe unpacked brown sugar may also help. I will probably keep looking for a meatball recipe and tweak this one a bit, but this was a pretty quick meal that will be added to our once every two months rotation. Thank you for the recipe!

Sweet Potato Casserole I

Made this last year for 170 people. Two huge professional grade pans of sweet potatoes. Made one and cut the sugar in half with marshmellows. Made one as directed. The one with the most sugar got he best votes. It was good either way. I don't like sweet potatoes and I liked the really sweet one because it was almost like a dessert. Gave five stars because I got such raved reviews.

Smoked Cheese Ravioli

I like Gouda and I love white sauce but this was not a do over for our family. I used meat ravoli in one pan and spinach in the other. We preferred the spinach. I, like others, had a hard time getting the cheese and cream to mix. Thanks anyway, but I'll keep looking.

Baked Slow Cooker Chicken

Easy Bacon and Cheese Quiche

I haven't had quiche in years, remembered that I liked and thought I'd try this. I made two, one with bacon and cheddar and one with ham and swiss. They cooked for two hours trying to get the middle to set. It just seemed like the stuff wasn't cooked and of course by then the edges were burned. Thanks and it might have been me, but I won't be making this again.

Skillet Ham, Cabbage and Potatoes

I have made this recipes for years via skillet or crockpot. When I cook in the crockpot I use one can of chicken broth. I use link sausage, not ham. Easy meal.

Zucchini Beef Bake

Our two adults didnt care for the recipe as written. I did utilize more than called for on the hamburger but otherwise adjusted everything and followed the recipe. We aren't big garlic fans and I think that might have been the problem to our taste buds as I thought it had an after taste. I will probably fix again but adjusting to a more of a basic beef, zucchini, cheese, salt and pepper recipe. Thanks anyway.

Slow Cooker Chops

Family was just getting over an illness and wanted something bland, easy and uneventful. This was it. Don't get me wrong, I got what I wanted and I will make this again. BUT I have to say I left out the water and just dumped the soup over the pork chops in the crockpot and boiled little red potatoes separately and nixed the greenbeans all together. Meat fell apart. I ended shredding mine and serving over my tators. It was good.

Mashed Potato Cakes

Very good will be making again. Hubby was excited. I'm 50 and kept asking mom how she made hers...guess she didn't remember the flour part of the recipe cause mine never would hold together. Glad I found this. Just like mom's.

I made this last night. Ended up not having bell pepper. Used three packages of Nolan Ryan sausage and quite a few tators (didn't measure). Next time I'll cut the tators down as hubby prefers meat. I did throw some cheese on it to help camaflouge the onions. Hubby and his best friend ate it up!

Beefy Baked Ravioli

I'm rating this as a three and maybe shouldn't because I didn't have the tomatoes. This was quick and easy which is a huge deal for me working two jobs. Used a little more meat because my hubby likes meat and doesn't care for pasta and the whole thing of ravioli. I'm not sure there was enough sauce and or cheese and I doubled it since I used more of everything. Hubby said I could fix again, if I worked on tweaking it. I will try it again but may try fresh ravioli next time. Thanks for the recipe!

Chicken with Wild Rice and Vegetables Casserole

I had hoped to really like this. Made exactly as the recipe stated. Everyone's thoughts were not great, not bad. Quick, easy fix one pot meal on a weeknight, but took really long to cook at 350 and the veggies were mush in the end. If I were to fix again I'd bake at 400 and add onion and mushrooms (maybe fresh veggies). Not sure if I will fix again. Thanks though.

Uglies

I tried this because hubby loves bbq and it was simple. Did not knock our socks off. Could have been me, maybe I didn't roll the dough out thin enough but hubby said, too much bread not enough meat. I don't like sweet meats so I cannot be a fair judge--I was hoping the cheese would help though. With that being said, we may try a modified version more along the lines of a casserole doing very thin crust and lots of meat. A definite consideration because it was so simple and that was per him. So will probably try my own version. The other thing hubby said was we used Sweet Baby Ray's bbq sauce....he thought with the bisquits maybe not using such a sweet sauce might help. I don't know....I have problems judging sweet dishes. Just an FYI. If you don't like sweet meats, this isn't the recipe for you. BUT I can see my grandkids loving this because they love bread and sweets.

Chicken Noodle Soup

Screwed up and didn't have fresh carrots and had to use frozen. I also didn't sautee anything. Threw it all in the pot and let it simmer since I wasn't feeling well. Hubby isn't a soup person but came back for seconds. Will probably make again as it was simple but not knock your socks off.

Sweet and Sour Meatballs III

The reviews got me on this and I had to try it because my husband enjoy sweet/sour even if I do not. My family did not enjoy this at all. The sweet/sour was so significant it was hard to eat without making that "tart" face. We won't be making this again. Thanks anyway.
