Chicken and Biscuit Casserole

This was so good! Even better than I expected. I subbed frozen peas for canned, and since I don't like biscuit mix I used the recipe for Miss Betty's Super Quick Dinner Rolls from this site and doubled it (I forgot to add the basil). After 35 minutes the top was puffy but not browned so I turned the broiler on for two minutes. Boyfriend loved it and it was so easy! Thanks!

Artichoke & Spinach Dip Restaurant Style

I didn't have time to roast it so I just did 2 cloves of fresh garlic. Other than that I followed the recipe. I thought it looked too dry when I mixed it, but it is very cheesy. I served it with baguette slices and tortilla chips. Next time I might try adding some red pepper flakes for some heat.

No Bake Cookies III

Sorry, this recipe didn't work for me! I read all the reviews, I boiled for two minutes, but I guess it wasn't a high enough boil because I still ended up with ooze, they weren't just mushy, you couldn't even pick them up. I was wishing I had made some other type of cookie because it was pretty much a waste, and I never have any problems when I bake! I don't think I would try to make these again, sorry.

Strawberry Vanilla Pancakes

So good. This recipe doesn't need any alterations! It's pancakes, not rocket science. I made this to use up leftover strawberries. I burned the pancakes and they still tasted good :)

Tuna Snack Spread

This is good for lunch on some wheat thins, I used light cream cheese and the large can of tuna, but next time I will use two six ounce cans. It was a little too cream cheesy for me as-is. I also added grated onion and will play around with adding a few other things.

Broccoli Delight Salad

I add grated carrot, and grate the broccoli stems in as well. I've also added Dijon mustard to the dressing and used pre-cooked bacon pieces, but this doesn't need any improvement. So good!!

Apple Pie by Grandma Ople

This was my first time making a fruit pie and it was pretty simple. I did use Pillsbury refrigerated pie crust and the lattice top was easier than I thought it would be. I followed the suggestion of adding the apples to the sauce, but then realized I had way too many apples (I used small apples but I probably still only needed six). I did use Granny Smith and added vanilla to the sauce but didn't have any nutmeg. I also brushed the bottom crust with egg white as some people suggested and brushed some of the leftover sauce on to the top crust. I baked it for the full time recommended and the top came out a little too dark but it didn't taste burnt at all. Thank you for this easy apple pie recipe!

Grandmother's Buttermilk Cornbread

Very good. I never liked the dry cornbread my mother used to make from the boxed mix. This is very moist and sweet and also a good base recipe if you wanted to add to it. I made it exactly as written except for melting the butter in a mixing bowl in the microwave. I left the batter in the fridge overnight and baked for 40 minutes, since it was cold. It was not dry or overcooked.

Basic Ham and Bean Soup

This didn't really come out the way I was expecting... I cooked in the slow cooker for at least 12 hours but the beans didn't really break down and become a thick soup like I thought they would, it still seemed like beans and vegetables floating in broth to me. With the leftovers I skimmed all of the liquid off the top and used an electric mixer to blend it up and I thought the texture was much better and looked less unappetizing. It did taste good, and I forgot to soak the beans overnight so I used the suggestion to boil the beans with baking soda a couple times which seemed to do the trick.

Hummus IV

This is how I always make hummus, just add a little more of everything until it tastes right. It's a good base recipe to add to. I also add salt and pepper and sometimes olive oil. They have small cans of tehani (tahini) in the ethnic foods section at most grocery stores.

Honey-Garlic Glazed Meatballs

I don't understand all the great reviews - the sauce just tastes like ketchup and honey to me. I tripled it to serve in the slow cooker, but ended up adding half a bottle of Very Very Teriyaki and that salvaged it. As for the meatballs, they are sooo good! I used garlic and herb breadcrumbs and grated the onion to make it almost a pulp. I wasn't sure what grade of hamburger to use though - I ended up going with mostly 80/20, but next time I would use something leaner. Thanks for this one.

Magic Cookie Bars from EAGLE BRAND®

These were good although I didn't think they called for enough graham cracker crumbs, it was too moist and didn't cover the bottom of the pan, so I added another 2/3 cup or so. I only got to taste a little, but my coworkers liked them. They were a little hard to remove from the pan, but I followed the instructions on the back of the can, which did not say to spray with non-stick cooking spray :(

Peanut Butter Kiss Cookies

These are so easy that I made them in the morning before work. They make a very nice presentation. However I used a cookie scoop instead of rolling them into balls, so they cracked quite a bit. Everyone still loved them. I recommend baking on parchment paper so they can be removed easily once they cool.

Miss Betty's Super Quick Dinner Rolls

These are good but I thought they were going to be rolls, and they are actually biscuits... I only had all-purpose flour so I added 1-1/2 tsp baking powder and 1/2 tsp salt. I mixed them up in a minute or two and threw them in the oven with the rest of Easter dinner, also I think this recipe as written could have made six instead of five. I didn't have any trouble getting them out of the pan but it was very well greased. Also good for breakfast the next day and would be great for biscuits and country gravy :)

Aunt Blanche's Blueberry Muffins

These are good, great basic recipe, I left out 1/4 cup of the sugar and they tasted great. I did add a little extra milk since the batter was pretty thick and I didn't want to smash the blueberries when I added them. It filled 12 muffin cups to the top and I baked for almost 35 minutes, the tops didn't get very brown but they were fully cooked... I might add a little oil or applesauce next time to make them moister.

Chutney Baked Brie

I made this to use some of the Mango Chutney (recipe from this site) that I made. It was sooo good. I added chopped pecans instead of cashews and served with sliced french bread and crackers. I left it in the oven another five minutes since it didn't really look any different after I cooked it, but the Brie was definitely melted when we cut into it (I didn't use a 2 pound Brie wheel though, it was 13 oz). My boyfriend loved it.

Mango Chutney

I made this to use up three leftover overripe mangoes. I scaled down to 52 servings (3 and 1/2 cups diced mangoes) and followed the cooking method suggested by Kirchy7. I left out the nuts and didn't bother with the fresh ginger root. Also I used red pepper flakes instead of a chile pepper. Mine looked done after about 40 minutues, but I probably simmered it a bit high.

Mondi's Super Simple Chicken

I added parsley, pepper and lots of paprika. When I tasted it I thought it needed more little salt, but I did use unsalted butter. I used half chicken breasts and they did not have many bones in them so I took them out after baking uncovered for about 45 minutes.
