Mexican Chorizo and Potato Casserole

I hate to rate this when I really just used it as a base recipe and made my own modifications to it but I would imagine the actual recipe is pretty good. I'm really just reviewing this for my own notes because I'd like to make it again. Microwaved some potatoes and diced them small - mixed those with diced tomatoes, 1 can of diced chilis, can of black beans, Fiesta chicken sausage, chili powder, cumin, garlic powder. Covered that with a cream cheese and yogurt mixture and then topped with cheese. We really liked this but some of the potatoes didn't cook through - either cover it next time or cook the potatoes further in the microwave.

Pepperoncini Beef

This was very tender, so much so that you couldn't slice the beef, only shred it. Don't know if there's anything to do about that, but oh well. Still delicious. Took some other reviewers advice and added some balsamic and then used water until the beef was covered. Not spicy at all but I could only find mild pepperoncini. Used the peppers in the sandwiches for the adults, yummy.

Refreshing Summer Orzo Salad

I have been making this salad for a long time - I usually throw in whatever I have on hand like artichokes or roasted red peppers. I don't always measure the ingredients but everyone who has it loves it. Thanks for a great recipe!

Apple Pie by Grandma Ople

Wow, this was really good. I've used the same recipe for 20 years and I think I may change it to this one. Of course, now I need to make my regular one and compare it to this since I haven't had it in a while. The only hesitation I have about this one is the amount of butter in it. Oh, and definitely add cinnamon. *Update. I've now made this several times and there is no comparison. This pie rules them all.

English Royalty Chocolate Chip Scones

Yummy!! Like everyone else I had to use way more orange juice (I didn't keep track of how much just kept adding until it seemed right). I also used chocolate chunks and it ended up tasting just the chocolate scones at Starbucks. Now I can save my $1.50 and just make them at home - thanks!!!

Pear and Blue Cheese Pastry Triangles

Baklava

This was very good and waaay simpler than I ever expected. Only had to use half of a phyllo dough box and it was plenty of sheets. Next time, I would make the amount of syrup called for, I increased it by a half this time and it was too much. Chill the syrup and put it on in waves so it doesn't all seep to the bottom. I would use more nuts next time. I also added some cardamom and lemon zest.

I creamed the butter together with the sugar (use all brown) and then I mashed the bananas instead of slicing them. Also added milk chocolate chips - awesome recipe!

Spicy Cranberry Chutney

Combined this with another chutney recipe I have. I didn't use an apple and I put in chili covered dried mango in place of the apricots. I also added some cider vinegar and chopped jalapenos.
