Strawberry Muffins

These were a big hit. I let the strawberries sit for about an hour after I chopped them so they wouldn't be too mushy. Also, I added 1/2 tsp vanilla, 1/2 tsp cinnamon and 1/4 cup brown sugar based on other people's complaints of lack of flavor. These were excellent - made them for snack at my son's kindergarden and even the kids loved them!

Pepperoncini Beef

This was very tender, so much so that you couldn't slice the beef, only shred it. Don't know if there's anything to do about that, but oh well. Still delicious. Took some other reviewers advice and added some balsamic and then used water until the beef was covered. Not spicy at all but I could only find mild pepperoncini. Used the peppers in the sandwiches for the adults, yummy.

Spicy Cranberry Chutney

Combined this with another chutney recipe I have. I didn't use an apple and I put in chili covered dried mango in place of the apricots. I also added some cider vinegar and chopped jalapenos.

Wisconsin Five-Cheese Bake

This was a heart attack on a plate in the best way possible. Used what cheeses I had on hand - mozzarella, swiss, muenster, provolone and 2 kinds of parmesan. I added a tablespoon of pesto and some tabasco to the ricotta mixture instead of the dry seasonings. This added a nice punch of flavor. I think next time I will increase the ricotta mixture so that it will be creamier. Maybe not double but by half. Much quicker than traditional mac and cheese - thanks!

Cream Cheese Frosting II

I add a cup of sugar when I want it a little sweeter and more spreadable and leave it as is when I want more of that cream cheese kick. Great frosting.

Lemon Horseradish New Potatoes

I would have to agree that these were nothing spectacular but that's not a bad thing! This is a good basic recipe that puts a twist on regular roasted potatoes. It would be nice to find a way to have the horseradish flavor come through a wee bit more.

Spanakopita (Greek Spinach Pie)

Fabulous. I was a little worried it was going to be too bland so I added dill, nutmeg and oregano per other suggestions. Made a bit more filling and put it in a 9x13. Used half a 16 oz pkg of phyllo. The top layer was a little too flyaway and unwieldy so I would love some suggestions on dealing with that.

I have been making this for years and can't believe I've never reviewed it. I will admit that the first few times I made it, it was very messy and difficult to do. Once you figure out what works best for you, it's a breeze. If you follow the instructions exactly as stated and use cold ingredients, the dough comes together in about 5 minutes and is very easy to handle. I use a dusting of flour to roll it out into a rectangle. I only make about half the filling. I make some with different flavored jellies and also use mini chips. I make different ones for each disc. One of my favorites...

Chocolate Pile-Up Cookies

These were delicious - followed the recipe exactly except for using roasted almonds instead of hazelnuts because that's what I had on hand. Definitely chop them small. I refrigerated them for an hour so I don't know if that affected the shape during cooking but they stayed pretty high and thick instead of spreading out. This was very much like a brownie cookie. It is very hard to tell when they're done since they are dark but I think 10 min is a good point for me.

Pork Tenderloin with Dijon Marsala Sauce

Very good - especially since you don't even have to add any salt or pepper. I used pork loin so you definitely need to cook it longer but the sauce was yummy. Didn't have any marsala so I used sangiovese instead and it was fine, not sweet.

Cranberry Orange Bread

I make this into muffins - very good recipe. I forgo the hot water and up the oj to 3/4 cup. I also chop up the cranberries to get berry goodness throughout the muffin. Make sure to bake at 325...I keep burning mine because I'm used to baking muffins at 400!

Wow! I have been making this recipe for years and can't believe I've never rated it. It is fantastic as is and is open to all kinds of adjustments depending on ingredients on hand. More cheese is always better.

Roasted Brussels Sprouts

I cut these into halves or quarters depending on how big they are. I also added a little bit of balsamic and garlic powder (didn't have any fresh). My favorite parts are the little leaves that fall off and get crispy - mmmm, good!

Clone of a Cinnabon

I really don't have anything to add to this except that they were AWESOME! My kids devoured them, they were very light and fluffy. I did add some vanilla to the dough and I think the key for me was to make sure they rose enough before I rolled them out and then again once they were formed. I also added some ground walnuts to the filling. Thank you!

Brazilian Collards

This was an excellent recipe. I didn't have any peppered bacon so I just used regular bacon and added a LOT of pepper. Not quite the same, I'm sure but still very good. Thank you for sharing.

Amazing Spicy Grilled Shrimp

Wow! Quite possibly the best shrimp I've ever made. Instead of hot sauce and chili paste, I just used some SriRaCha (Thai hot sauce). A little spicy for the kids but I tried to turn it down a little by adding more lemon juice. Also, instead of parsley, I used cilantro. Grilled on perforated grill sheet so the shrimp stayed a little saucy. Excellent! Thanks for the recipe.
