Strawberry Muffins

These were a big hit. I let the strawberries sit for about an hour after I chopped them so they wouldn't be too mushy. Also, I added 1/2 tsp vanilla, 1/2 tsp cinnamon and 1/4 cup brown sugar based on other people's complaints of lack of flavor. These were excellent - made them for snack at my son's kindergarden and even the kids loved them!

Blueberry Oat Muffins

I have been making this recipe for years and I can't believe I have never reviewed it! This is my go to recipe for muffins -they always get rave reviews and everyone asks for the recipe. I substitute whole wheat flour for half the flour called for. I also add 1 tsp of vanilla for a little more flavor. I have also made this with strawberries and they are great. Seriously, thank you so much for this recipe, I make it ALL the time!! (The batter also freezes really well)

Amazing Spicy Grilled Shrimp

Wow! Quite possibly the best shrimp I've ever made. Instead of hot sauce and chili paste, I just used some SriRaCha (Thai hot sauce). A little spicy for the kids but I tried to turn it down a little by adding more lemon juice. Also, instead of parsley, I used cilantro. Grilled on perforated grill sheet so the shrimp stayed a little saucy. Excellent! Thanks for the recipe.

English Royalty Chocolate Chip Scones

Yummy!! Like everyone else I had to use way more orange juice (I didn't keep track of how much just kept adding until it seemed right). I also used chocolate chunks and it ended up tasting just the chocolate scones at Starbucks. Now I can save my $1.50 and just make them at home - thanks!!!

Amazing Hawaiian Chicken Chili

Based on the other reviews and cost of ingredients for this dish, I was a little leery of trying it but I'm glad I did! The instructions are definitely way too complicated, the point of a slow cooker is to minimize the work. I just mixed the chicken and bbq sauce together first and then threw everything else in (except the pineapple) and cooked on low all day. Used minced onion and garlic puree, crushed tomatoes, 2 tbsp reg chili powder and 1tbsp chipotle chili powder, raspberry chipotle salsa (all I could find). Definitely cut up the pineapple chunks, they are too big right out of the can. The only thing I would try and fix is the sauce ratio. There seemed to be too much sauce and not enough chicken and beans.

Simple Grilled Lamb Chops

I couldn't stop eating this lamb and neither could my whole family! Loved the tanginess and the mild addtl flavor added by the spices. Used a butterflied leg of lamb and cooked on the grill. Put the onions to the side and caramelized - used 2 but next time, I will use 4. Thank you!

Cantonese Style Pork and Shrimp Dumplings

These were fabulous. I definitely need to add some ginger, it was the one spice that I really missed. I baked them at 450 for about 15 min. after I sprayed with Pam. Did one tray so they overlapped a bit but next time I would use 2 so I could spread them out. Had to use wonton wrappers but that was fine.

Key Lime Ice Cream

This was good but I feel it could be even better. I didn't change anything except I only added 3 yolks instead of 4. I love tart and it was a little too tart even for me but that could be the limes I was using. Also, the final product was not as creamy as I would have liked. I'll use a combo of half and half and cream next time. Honestly, the custard was better than the finished ice cream! I also added graham cracker pieces to make it more like pie ice cream.

Salty and Sweet Cranberry Citrus Brine

I'm truly not sure how to rate this recipe. I'll start by saying that the turkey tasted great but I didn't really taste the flavors from the brine and the ingredients are too expensive to waste on something I'm not tasting. I've used other brines before and I don't feel the other ingredients added anything special. The cranberry juice dyed the bird an unappetizing pink and it browned way too quickly. I covered with foil but the skin was almost black by the time it was done. So in the future I think I'll pass on the frozen juices but use other features from this recipe.

Wow!! This was fantastic. Followed everyone's suggestions and added some basil leaves. I also had some spinach leaves on hand so I threw those in too. Thanks for the recipe, can't wait to try it on company...

Autumn Lentil Soup

This soup was good but nothing spectacular. I didn't add the garlic powder or dried onion since I had already added fresh earlier. I like the flavor of the wine but it needs something else, still a little too bland. I may add carrots next time.

Mediterranean Puff Pastry Chicken

The flavors in this were amazing. Couldn't find sun dried tomatoes so I used sun dried tomato pesto and omitted the regular pesto. This actually was a good move as some of my kids wouldn't have liked the chunks of tomato and it was very flavorful. I used chicken tenderloins so they cooked pretty fast. It would be nice to find a better way to wrap them, I sealed quite a bit and they still opened and leaked so the bottoms were soggy. I also think you could use crescent dough to make this but I'm sure it wouldn't be as good (but it would be cheaper!). I also think we prefer lots of smaller ones as opposed to several big ones. Thanks for an amazing recipe! PS Tried it with shrimp and prefer the chicken. Also, cooked on a rack over a pan so it was much less soggy - just remember to grease the rack! Can also make this with bread dough - I used leftover chicken so it was already cooked. Remember to put ingredients in upside down since it will have to be flipped over so seam is on the bottom.

Potluck Pepperoni Bread

This was really good. I added a little bit of sauce, Italian seasoning and some parmesan. Very easy to make and very quick. It was a little greasy so it might be better to use turkey pepperoni.

Mango Chicken Bake

This was delicious as is but with a few tweaks could be a 5 star recipe. The flavor and texture were very comforting but I would have like a greater punch of flavor so next time I will up the amount of curry paste and vinegar I put in. Salt the chicken before you put it in. I would also mix the curry paste mixture into the rice before I put the chicken in - very hard to distribute the flavors afterwards. I was surprised that the mango wasn't as mangoey as I thought it would be but instead mellowed out and combined with the rice to be like a sticky rice. Maybe jarred mango would actually be better to maintain the flavor. Thank you for a great recipe!

Easy Apple Crisp

Very yummy! I only used about 3/4 cup of water and baked for 45 minutes and the apples were perfect - I sprinkled a little cinnamon directly on the apples after adding the water. Next time I might add some chopped nuts to the topping.

Very good and easy recipe to make with ingredients on hand. I spooned a little of the juice from the tomato/basil mixture over the fish before baking it as well. It made the fish very tender. Next time I think I will add some sugar to the tomatoes as they were a little sour.

Orzo with Parmesan and Basil

Mediterranean Mac and Cheese is a perfect description. My 11 year old daughter made this by herself and it was a great side dish. Yes, it was fairly plain but sometimes that's what you want. I would think there would be lots of ways of changing the flavors in it if you wanted to.
