Asparagus with Parmesan Crust

This was really simple and good. I roast the asparagus for a few minutes before I sprinkle on the cheese. I've always forgotten to add the balsamic and it's still wonderful. Will probably be even better with it.

Glazed Corned Beef

My family really liked this...I just thought it was OK. I think I would prefer the glaze on pork or some other cut of beef. Just didn't go with the corned beef for me. I did boil it first to tenderize and then put it in the oven for 30 minutes.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I suppose this has potential, it just needed a lot more flavor. I tried to caramelize the onions a little bit but it didn't seem to do anything. I used frozen spinach so that could have been the problem. Maybe a splash of balsamic or wine would help.

King Crab Appetizers

Added 2 cans crab, lemon, tabasco and garlic powder to the mix. Forgot to pick up phyllo cups at store so made my own with puff pastry dough. They burned a bit but were still good. Phyllo cups next time for sure!

Southwestern Egg Rolls

The filling in this was good but maybe needs a little more moisture. I used a whole can of black beans and used egg roll wrappers. Lightly baked and then refrigerated for party next day. Came out soggy from fridge and when I heated back up, they were kind of rubbery. Have to try a different method next time.

This was very good. I've also seen a sweet version that can be made with sugar and cinnamon. Glad to see that you can use canned, I made mine with dried chickpeas that were soaked overnight.

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

This was delicious! I have to say that I only made the chicken portion of this and we ate it with rice. I think the sauce would be delicious with shrimp as well The only other change I made besides amounts (I used 4 pieces of chicken and increased liquid amounts) was to add a jalapeno to the garlic/cilantro mixture. For the future, double the sauce because it's yummy!

Cranberry Orange Bread

I make this into muffins - very good recipe. I forgo the hot water and up the oj to 3/4 cup. I also chop up the cranberries to get berry goodness throughout the muffin. Make sure to bake at 325...I keep burning mine because I'm used to baking muffins at 400!

Lemon Parmesan Spaghetti

This was nothing special, it ended up coming out pretty thick and I went easy on the lemon due to other reviews but it really should have more in it. I also added some garlic and white wine but it still wasn't extremely flavorful.

Key West Penne

I really liked this - probably would have been better with the real cream but I used half and half. Sadly, the rest of my family doesn't care for artichokes so I don't get to cook with them very often. I thought the rest of this recipe might sway them but it didn't work :( I tried to punch up the flavor by using garlic, red pepper and basil but it wasn't enough. I'll spice it up a little more next time, maybe even add a little lemon juice.

Savory Sausage Bread

This seems like it would make a good base recipe but currently it comes out very bland and dry. I even added some spices to it based on other's suggestions but that didn't seem to work. If anyone has any ideas on how improve it, please post!

Rave reviews from guests on this. Was a little bit too spicy so I need to adjust next time. I think I used too much of the chili powder in combination with Stubb's spicy sauce. Otherwise, followed recipe exactly. Yummy - thanks!

Curried Mustard Greens with Kidney Beans

This dish was amazing. I think they need to be cooked a little longer than stated in the recipe and I didn't chop them up well enough. Next time I will chop much finer but otherwise, followed the recipe exactly and it was fantastic.

Sweet and Savory Kale

This was very good - I didn't add the nuts because I thought it would be too much but next time I might try some of them toasted. Maybe even pine nuts instead of almonds would be good. I also think this would be great with golden raisins instead of craisins. I used half the sugar and it was still too sweet so I will reduce it next time.
