Baked Oatmeal II

This was fabulous! Reduced the sugar, added a little applesauce. Used strawberries and milk chocolate chips with no dried fruit but I think it's infinitely adaptable. Instead of mixing the butter in, I melted about 1/4 c of butter and drizzled it on top of the casserole right before baking. I think this was plenty of butter. Delicious and filling!

Mozzarella-Stuffed Leg of Lamb

This has potential. Used feta and added some spinach. The meat needed some flavor so next time I should season it before stuffing. Also, I think it would be better to sear it before putting it in the oven. I did not use the chili sauce.

Chicken Pot Pie VIII

Followed the recipe - used premade pie crust. Usually just throw in whatever veggies I have on hand. I microwave the potatoes first and then cut them to put in (just to save a pan). I make it with leftover chicken so I can skip that cooking step too. I add everything to the gravy and pour it in together. It is a lot of filling but fine for my deep dish pie pan. Everyone in my family loves it which is a tall order!

Orange Cranberry Drops

These were very refreshing. I didn't add orange extract and there's plenty of orange flavor. They flattened out a bit which was fine but in the future, if I want them fluffy, I will put them in the fridge.

Chocolate Chip Orange Zucchini Bread

I made this into muffins - did a mix of white chocolate and milk chocolate chips. I definitely tasted the orange flavor, it was subtle like it should be. They were a little too sweet but my kids certainly didn't complain!

Spicy Pecan Soup

I was quite disappointed by the lack of wow factor with this soup. I roasted the pecans and I think that did help with the flavor a little bit. I added 2 whole chipotles but I think this was too much - one would have been sufficient and we love spicy food. Overall, a decent starter course but definitely not for dinner and not one I'll make the effort to make too often.

Chicken Pot Pie IX

Combined this with another recipe and some common sense. Added potatoes and let them cook in the broth before adding chicken and vegetables. Good basic recipe for the sauce.

Crustless Cranberry Pie

I will need to rename this to quick cranberry bread. Very easy and delicious but really more like a cake or muffin. 2nd time I made it I used half brown and half white sugar. This was a great choice, really caramelized nicely. I also did half wheat flour - batter consistency was not good but came out great in the end. Next time I will add some zest, either orange or lime. Served it for breakfast, yummy.

Super-Delicious Zuppa Toscana

Good soup - I added a ton of red pepper flakes but it wasn't spicy at all. Couldn't find hot sausage so will have to do it next time. Broth was extremely thin - used half and half instead of cream so should let it simmer down a little. Used kale and no bacon.

Tiramisu Cheesecake

I really didn't think this was anything special but there was nothing wrong with it. I added more kahlua in both crust and cheesecake and also added 1 tsp espresso powder to cheesecake. Coffee taste was still very mild which it should be.
