Sweet and Spicy Slow Cooker Beans and Ribs

I used bone in ribs and the dish was very good, however, I really couldn't taste the mango or the other flavors very well. I wonder if the same results would be achieved by just cooking the ribs with the beans and a little barbecue sauce.

Chef John's Shrimp and Grits

This was yumbolicious. You really can't go wrong with cream and lemon but the Cajun flavoring took it to another level. I had to use 2 lbs of smaller shrimp and so I doubled the sauce. There ended up being too much sauce so I will adjust that next time. I used the Cajun seasoning recipe from this site. I also had some leftover Andouille sausage that I put in with the bacon. I just realized I never added the fresh garlic, whoopsie. Didn't notice it at all, don't think it's necessary.

Pepper Bread

This recipe has a lot of potential but is pretty bland as is. Of course, there is the punch of the pepper which is great but the rest of the bread is doughy and flavorless. I like the idea of making them as rolls in a 9x13 pan and maybe adding some flavor to the dough. A mix of whole wheat and regular flour might help. Very easy. Upon further review (and eating leftovers!) I need to downgrade this - the bread is really not even worth eating, sorry.

Southwestern Turkey Soup

This was a good base recipe. I made broth with a turkey carcass and then added 2 small cans of crushed tomatoes. I was in a hurry so I didn't add any fresh aromatics but next time I will saute some onion, garlic and jalapeno and add them to the soup. I added 2 limes because I had a lot of broth and I loved the taste of it. Almost like Tom Yam but with a Southwestern flair. The amount of spice called for was not enough so I upped that and added black beans and corn.

Dutch Leek Casserole

Ice Cream Base

I combined this with another recipe and added 2 more cups of liquid. So I used 3 cups heavy cream and 3 cups milk. Increased the sugar to 1.5 cups. I then made kheer/kulfi ice cream. Added ground pistachios, rose water, saffron, ground cardamom to the custard. Added some chopped pistachios near the end of churning time.

French Leek Pie

This was ridiculously good, especially with the home made pie crust from this site, it's a wonder I didn't eat the whole thing! I added bacon and garlic but I'm sure it would be wonderful without both of those. Only had Parmesan on hand but I'm excited to try it with the Gruyere.

Rhubarb and Strawberry Pie

I used 3 cups of each. It was better the first time I made it, think I cooked it too long this time. I'll go back to following the original insructions, take pie shield off after 30 min. I also think I'm going to use a little bit less sugar next time.

Ruth's Grandma's Pie Crust

So, I guess I've been doing pie crust wrong my whole life. This was fantastic and puts my BH&G recipe to shame. The liquid didn't seem like it would be enough but it totally was, use a little less if it's humid out. I split it into 3 crusts and rolled into 12 inch circles. I would just add a 1/2 tsp. of salt for next time.

Blueberry Cheesecake Ice Cream

The concept of this recipe is fantastic - love the blueberry sauce and the graham crust. It is a lot of extra work but I think it's worth it to make it fresh (especially with fresh-picked blueberries). The ice cream itself needs some work. I don't like cooking with pudding mix and this confirms my opinion. It was too airy and soft and the flavor was just OK. I am going to look for a true cheesecake ice cream recipe for next time. Also, cut the graham cracker mix in half - that was plenty. The amount definitely overwhelmed my ice cream maker so make sure to do half one day and the other half the next day.

Glendora's Chocolate Fudge Pudding (Cake)

This was great. Some of the reviews said it only needed a pinch of salt but next time I'm going to add the full amount because I felt like it could use a little more flavor. I added chocolate chips in the batter and then sprinkled some on top after I poured the water.

Oma's Cottage Cheesecake

Of course this isn't like real cheesecake but it is a nice, easy substitute. I don't think I will add the milk next time and I will try and strain the cheese a little more. There seem to be endless variations so it will be good to experiment.

Chocolate Pile-Up Cookies

These were delicious - followed the recipe exactly except for using roasted almonds instead of hazelnuts because that's what I had on hand. Definitely chop them small. I refrigerated them for an hour so I don't know if that affected the shape during cooking but they stayed pretty high and thick instead of spreading out. This was very much like a brownie cookie. It is very hard to tell when they're done since they are dark but I think 10 min is a good point for me.

Beer Braised Irish Stew and Colcannon

This was yummy. Next time, during the second part of the braising process, if I do it in the oven, I need to remember to stir every 15 minutes or so. The top part was pretty brown and dried out when I took it out so I stirred and put the lid back on to rehydrate so that was fine. Flavor was great.

Orzo with Parmesan and Basil

Mediterranean Mac and Cheese is a perfect description. My 11 year old daughter made this by herself and it was a great side dish. Yes, it was fairly plain but sometimes that's what you want. I would think there would be lots of ways of changing the flavors in it if you wanted to.

Best Big, Fat, Chewy Chocolate Chip Cookie

I didn't have time to refrigerate these before baking so I was worried they would come out flat. They didn't at all. The cookie flavor was a little cakier than I prefer but still an overall good cookie. I followed the directions exactly except that the butter was just softened, not melted. Could probably reduce the # of chocolate chips a little.

Best Chili

This had some unorthodox directions so I changed the order of some of the steps to suit my cooking style. It had nice flavor but needs to be punched up a little bit. I didn't add chipotle sauce because I didn't want it to be too spicy and it was just right for kids but I think it could use a little more spice. I didn't add the can of diced tomatoes and I'm glad that I didn't because the consistency of the chili was perfect. Maybe a little more chili powder and other spices next time. I think I will use red wine next time, liked the beer flavor. I also only used one can of the kidney beans and that was perfect for us.

Grandma Johnson's Scones

There wasn't nearly enough liquid so I added half and half. The dough was still hard to work with and when they were baking, all of the butter separated out. My family enjoyed the taste of the end result.

I have been making this for years and can't believe I've never reviewed it. I will admit that the first few times I made it, it was very messy and difficult to do. Once you figure out what works best for you, it's a breeze. If you follow the instructions exactly as stated and use cold ingredients, the dough comes together in about 5 minutes and is very easy to handle. I use a dusting of flour to roll it out into a rectangle. I only make about half the filling. I make some with different flavored jellies and also use mini chips. I make different ones for each disc. One of my favorites...
